In a bowl, combine cheese, vegetables and seasoning.

Spread the vegetable mixture evenly on a slice of bread.
Place another bread on top and gently press.

Cut the sandwich into squares or triangles and enjoy.
Substitutions and Variations
Vegetables: You can add more veggies like bell peppers, lettuce or spinach.
Seasoning: You can try mixed Italian herbs or oregano to make it more flavourful. We didn’t use any herbs, as we used garlic herb cheese.
Bread: Try wholemeal or multigrain bread instead of white to make the sandwich healthier.
Cheese: We used garlic herb soft cheese, but you can swap it with plain soft cheese or any other flavoured cheese.
Corn: We used frozen corn to cut down prep time, but you can use fresh corn. Just boil it before adding it to this recipe.
Storage
For weekly meal prep, chop and prepare vegetables in advance and store them separately in an airtight container in the fridge. Prepare the vegetable cheese spread and assemble sandwich when ready to serve.
Wrap any leftover sandwich with foil or clingfilm and store it in an airtight container in the fridge. Consume within a day.

- 4 slices white toastie bread
- ½ cup garlic herb cheese spread
- ¼ cup cucumber chop finely
- ¼ cup carrot grate
- ¼ cup frozen corn thaw
- ¼ teaspoon pepper adjust to suit kids taste
Instructions
- In a bowl, combine soft cheese, carrot, cucumber, corn and pepper. Mix until everything is well combined.½ cup garlic herb cheese spread, ¼ cup cucumber, ¼ cup carrot, ¼ cup frozen corn, ¼ teaspoon pepper
