These eggless almond flour cookies is a super simple recipe that kids can make with minimal assistance from adults. It is a healthy and interesting way for kids to have a break from screen time and keep them engaged.

Cooking with kids can be enjoyable, but their safety should be prioritised. Only allow older kids to handle oven with appropriate mitts if you believe they are capable and keep younger ones at a safe distance while it’s in use.   • Flour: Almond flour is used here.
  • Pantry Ingredients: Unsweetened cocoa powder and halved/split almonds (optional).
  • Sweetener: I used maple syrup, but you can use any other natural sweetener. Check ‘variations and substitutions’ section for alternative options.

How To Make Almond Flour Chocolate Cookies?

Step 1: Preheat oven and line a baking sheet with parchment paper/greaseproof paper.

Step 2: In a mixing bowl, combine all ingredients except almonds.

Step 3: Mix well with a spatula until everything is well combined and comes together into a soft dough.

Step 4: Now transfer the dough onto a silicone mat.

Step 5: Cover it with baking sheet and gently roll with a rolling pin.

Step 6: Use your kid’s favourite cookie cutter and press straight down.

Step 7: Carefully lift each cookie with a spatula and place it on a lined baking sheet with a little space between them.

Step 8: Gather leftover dough and roll again. Shape with a cookie cutter and place them on a baking sheet.

Step 9: Place the baking sheet in pre heated oven and bake.

Step 10: Let cookies cool on the tray as they firm up while cooling.

Substitutions and Variations

Sweetener: You can substitute maple syrup with other natural sweeteners such as honey, date syrup, date caramel or agave syrup.

Cocoa Powder: You can replace unsweetened cocoa powder with chopped dark chocolate. However, you may need to adjust the sweetener, as dark chocolate contains sugar. Also, remember it could change the texture of cookie as well.

Tips and Tricks

Baking time: Keep an eye on the oven as the cookies bake, as the baking time depends on your oven’s settings and the thickness of the cookies.

Parchment paper: Roll almond chocolate dough between parchment papers or a silicone mat to prevent it from sticking to the rolling pin and making the process messy for kids.

Cookie cutter: Either dip cookie cutter in the dough or apply oil all around it to prevent dough from sticking to it. Wipe and repeat the process between cutting out the shapes.

Spacing: Place cookies on a lined baking sheet with a little spacing between them. Too much spacing is not necessary, as almond cookies don’t spread much during baking.

Storage

Store cookies in an airtight jar at room temperature for 2-3 days or in the refrigerator for up to a week.

Make sure cookies have cooled completely before storing, as trapped moisture causes condensation in the jar and makes cookies soggy.

Why are my cookies soft?

Do not worry if cookies are soft or fragile when hot, as they firm up while cooling. So it is essential to let cookies cool in a lined baking sheet for 5-10 minutes. Slightly underbaking also keeps them soft.

Can I freeze almond cookies?

Yes, you can freeze cookies for about a month. Thaw before serving.

Are almond chocolate cookies gluten free?

Yes, almond flour is naturally gluten free making these cookies suitable for people who follow gluten free diet.

Why do my cookies have cracked edges?

Press cookie cutter straight down on dough but do not twist as twisting drags the dough sideways instead of cutting cleanly resulting in distorted or cracked edges.

1 Cup = 250ml ; 1 Tablespoon = 15ml ; 1 Teaspoon = 5ml

  • 1.5 cups (or) 180 gms almond flour
  • ¼ cup (or) 25 gms cocoa powder
  • cup maple syrup
  • 8 almonds (optional) split each into half

Instructions

  • Preheat oven to 170 C (340 F) and line a baking sheet with parchment paper/greaseproof paper.
  • In a mixing bowl, combine 1.5 cups (or) 180 gms almond flour, ¼ cup (or) 25 gms cocoa powder and ⅓ cup maple syrup.

  • Mix well with a spatula until everything is well combined and comes together into a soft dough.
  • Now transfer the dough onto a silicone mat.
  • Cover it with baking sheet and gently roll with a rolling pin.
  • Use your kid's favourite cookie cutter to cut out shapes pressing it firmly into rolled dough. Repeat the process with remaining rolled dough.
  • Carefully lift each cookie with a spatula and place it on a lined baking sheet with a little space between them.
  • Gather leftover dough and roll again. Shape with a cookie cutter and place them on a baking sheet.
  • Place each almond half in the centre of each cookie.
    8 almonds (optional)
  • Place the baking sheet in pre heated oven and bake for 12-15 minutes.
  • Let cookies cool on the tray as they firm up while cooling.
  • Serve delicious 3 ingredient almond chocolate cookies to your kid with smoothie or milkshake of their choice.
