3 Ingredient Almond Flour Pistachio Cookies (Kid Friendly)

Three ingredients, one bowl and a dough kids can mix, squish and shape on their own. These 3 ingredient almond flour pistachio cookies are soft in the middle, lightly crisp at the edges and naturally sweetened by maple syrup. There’s no egg, no refined sugar, no butter, no wheat flour or refined flour.

If a kid can stir and roll a ball, they can make these with minimal adult’s help.

Cooking with kids can be enjoyable, but their safety should be prioritised. Only allow older kids to handle the oven with appropriate mitts if you believe they are capable and keep younger ones at a safe distance while it’s in use. How To Make Almond Flour Pistachio Cookies?

Step 1: Line baking tray with silicone mat/baking sheet.

Step 2: Grind pistachios until they look like coarse sand.

Step 3: Combine almond flour and ground pistachios.

Step 4: Stir in maple syrup and mix until dough forms.

Step 5: Make a small ball, place on mat and gently flatten with spoon.

Step 6: Place chopped pistachios in the centre of each cookie.

Step 7: Bake in preheated oven.

Step 8: Once done, allow cookies to cool completely.

Serve these delicious 3 ingredient almond flour pistachio cookies on their own or with banana pineapple mango smoothie or fresh watermelon juice.

Storage

Keep these cookies in an airtight container at room temperature for up to 3 days, or in the fridge for up to a week. Allow cookies to cool fully before storing in an airtight container.

Tips and Tricks

Baking time: Keep an eye on the cookies as they bake, as baking time depends on your oven settings and thickness of cookies.

Oil: Grease kid’s palms with oil before making small balls from dough to prevent it from sticking to their palms.

Don’t overgrind pistachios: Overgrinding causes pistachios to release oil and turn pasty which can make the dough greasy.

Crumbly dough: If dough is too crumbly to hold the shape, add a splash of maple syrup to help it bind.

Too sticky dough: Add a spoonful of almond flour to adjust the consistency of the dough.

Ingredients

1 Cup = 250ml ; 1 Tablespoon = 15ml ; 1 Teaspoon = 5ml

  • 1 cup (110 gms) almond flour
  • ½ cup (70 gms) pistachios
  • ⅓ cup maple syrup
  • 5-6 pistachios finely chopped

Instructions

  • Preheat oven to 160 C (320 F) and line baking tray with silicone mat.
  • In a blender grind ½ cup (70 gms) pistachios until they look like coarse sand.
    ½ cup (70 gms) pistachios
  • In a mixing bowl, add 1 cup (110 gms) almond flour, ground pistachios and stir with a spatula until everything is well combined.
    1 cup (110 gms) almond flour, ⅓ cup maple syrup
  • Now add ⅓ cup maple syrup and stir until everything comes together as a dough.
  • Scoop the dough with a tablespoon, place it on a greased palm and roll it into a ball.
  • Place it on a silicone mat, gently press each ball with the back of the spoon to make a well.
  • Place chopped 5-6 pistachios in the centre of all cookies.

Notes

Baking time: Keep an eye on the cookies as they bake, as baking time depends on your oven settings and thickness of cookies. Check at 10 minute mark and continue baking if necessary.
