If you have ever stood over a pot of sugar syrup checking for that classic sign one string consistency, you will understand why this shortcut version exists. This quick rava laddu recipe skips the sugar syrup, but condensed milk acts as sweetener and binder.

This is the same comforting semolina, ghee and roasted nuts and raisins you know from the traditional version, just a shortcut version to save time and energy, specifically for beginners.

How To Make Rava Laddu Without Sugar Syrup?

Step 1: Fry cashews and raisins in ghee.

Step 2: Remove them onto a plate and set aside.

Step 4: Add condensed milk and stir until everything is well combined.

Step 5: Stir in fried cashews, raisins and cardamom powder.

Step 6: Grease your palm with ghee and shape the mixture into laddus while it is still warm.

Storage

Let laddus cool completely, then store them in an airtight container at room temperature for up to 4 days. Consider storing them in the fridge for longer shelf life. For best texture, let refrigerated laddus come to room temperature before serving.

Tips and Tricks

Shape laddus: The mixture firms up as it cools, so try shaping laddus while the mixture is still warm. If it cools down before you finish shaping, briefly heat it to loosen it again and continue shaping.

Too wet mixture: If the mixture feels too wet or sticky and difficult to shape, stir in extra roasted semolina to get the right consistency.

Too dry mixture: If the mixture feels too dry, add condensed milk, a teaspoon at a time until it reaches desired consistency.

Grease palm: Grease your palm with ghee or oil to prevent mixture from sticking.

Equipment

  • 1 Heavy Bottom Steel Pan
  • 1 Spoon

Ingredients

1 Cup = 250ml ; 1 Tablespoon = 15ml ; 1 Teaspoon = 5ml

  • 3 tablespoons ghee
  • 8-9 cashews each broken into 2-3 pieces
  • 1 tablespoon raisins
  • 1 cup (or) 195 gms semolina
  • ¾ cup (or) 200 gms condensed milk adjust to taste
  • 1 teaspoon cardamom powder

Instructions

  • In a heavy bottomed wide steel pan, melt 3 tablespoons ghee over medium low heat.

  • Now add 8-9 cashews, 1 tablespoon raisins and fry until cashews turn light golden brown and raisins puff up.

  • Take them off the pan and place them on a plate/bowl. Set the plate aside.
  • Add 1 cup (or) 195 gms semolina to the pan and roast in the remaining ghee over a medium low flame until it is aromatic.

  • Now add ¾ cup (or) 200 gms condensed milk, stir until everything is well combined and comes together into a dough like consistency.

  • Stir in 1 teaspoon cardamom powder, fried cashews and raisins.

  • Pinch lime size mixture and shape it into a laddu while mixture is warm and pliable. Continue the process with the remaining mixture.
  • Let them sit for a few minutes to cool completely and firm up before serving or storing in a container.
