Dry fruit laddu - a wholesome, nutritious, and utterly delicious treat made with various nuts and dried fruits.

These sweet and guilt-free dry fruit laddus are the powerhouse of energy and nutrition. It is perfect as a healthy snack or dessert for any time of the day - be it a mid-day craving, a quick snack during a work break, an after-school snack, post-workout or to pack in a kid's snack box.
These laddus are a great way to incorporate the goodness of nuts and dried fruits in picky kid's food. The best part is that it is so addictive and enticing that kids don't even care that it has a lot of nutrient-rich ingredients.
Ingredients
- Nuts: Almonds, cashews, pistachios, walnuts, melon seeds, sunflower seeds and poppy seeds.
- Dried Fruits: Dates and dried figs.
- Spices: Cardamom powder.
- Pantry Ingredients: Edible gum (gond) and ghee.

Step By Step Instructions
Step 1: Chop cashews, almonds and walnuts into small pieces. Remove seeds from dates and keep everything in separate bowls.
Step 2: Heat 2 teaspoons of ghee on medium heat in a wide pan or skillet.
Step 3: Add edible gum crystals (gond) and fry until they fluff up, stirring regularly.
Step 4: Remove them from the pan and place them in a bowl. Set it aside until it cools completely.
Step 5: Meanwhile, in the same pan, heat 2 teaspoons ghee on medium heat.
Step 6: Fry almonds stirring regularly followed by cashews and walnuts until they are fragrant. This usually takes about 4-5 minutes. Be careful not to burn them.
Step 7: Transfer the fried nuts to a bowl.
Step 8: Heat 2 teaspoons ghee in the same pan, fry raisins and dried blueberries stirring regularly until they fluff up.
Step 9: Now stir in melon seeds and sunflower seeds and fry for a minute. Next mix in poppy seeds and fry for a minute until fragrant.
Step 10: Transfer them to the bowl containing nuts. Set the bowl aside.
Step 11: Place the cooled edible gum crystals in a mortar and pestle and grind them into a powder.
Step 12: Set it aside to use later.
Step 13: Add deseeded dates and chopped figs in a mixer jar or food processor and blend them into a coarse paste.
Step 14: Heat ghee in a pan over low flame. Add the dry fruit paste and cook for 2-3 minutes, stirring continuously.
Step 15: Add the fried nuts and dried fruits to the pan. Mix well to combine.
Step 16: Now add maple syrup, cardamom powder and edible gum powder and stir well, ensuring everything is well incorporated.
Step 17: Remove the mixture from the heat and let it cool slightly, just enough to handle.
Grease your hands with a little ghee and take small portions of the mixture to shape them into round laddus.
Let the dry fruit laddus cool completely then store them in an airtight container.
Substitutions and Variations
Nuts and Seeds: Try other nuts and seeds such as pumpkin seeds, pecans and hazelnuts or any other variety that you have on hand.
Dried Fruits: Try other varieties such as dried cranberries and apricots instead of dried blueberries and raisins for a varied flavour.
Spices: A small pinch of nutmeg powder or cinnamon powder adds a lovely earthy flavour to the laddus. Try it instead of cardamom.
Vegan: Use coconut oil instead of ghee for a vegan version.
Sweetener: You can use jaggery syrup instead of maple syrup.
Storage
Store the dry fruit laddus in an airtight container. They stay fresh at room temperature for about 10- 12 days. For longer storage, keep them in the refrigerator.
Tips and Tricks
Ghee Quantity: Adjust the quantity of ghee based on the consistency of the mixture. It should be enough to fry the ingredients but laddus should not be too greasy.
High-Quality Ingredients: Use good-quality dry fruits. Stale nuts and dried fruits can affect the flavour and texture of the laddus.
Properly Fry Nuts: Shallow frying nuts on medium-low heat enhances their flavour and crunchiness. But ensure not to burn them.
Balancing Sweetness: Feel free to omit the maple syrup if you dislike added sugar. Dates, figs, and raisins are usually naturally sweet enough.
Dates: Use majdool or any other soft dates that combine well figs while blending and give laddus a lovely chewy texture.
Shaping the Laddus: Grease your palms with a little ghee before shaping the laddus. This prevents the mixture from sticking to your palm.
Consistency of the Mixture: The mixture should be sticky enough to hold together but not too wet. If the mixture is too dry, add a bit more blended dates. If it’s too wet, add more chopped nuts.
FAQ
Of course, you can grind nuts. But make sure not to over grind, rather pulse them to achieve chunky texture rather than smooth. Alternatively, place nuts separately in zip lock bags and crush them with a rolling pin.

- 79 gms (or) ⅔ Cup Walnuts chop finely
- 130 gms (or) ⅔ Cup Almonds chop finely
- 65 gms (or) ½ Cup Pistachios chop finely
- 145 gms Dried Figs chopped
- 75 gms (or) ½ Cup Raisins
- 90 gms (or) ½ Cup Dried Blueberries
- 365 gms (or) 2 Cups Dates remove seeds
- 23 gms (or) 2 Tablespoons Sunflower Seeds
- 20 gms (or) 2 Tablespoons Melon Seeds
- 6 gms 1 Tablespoon Poppy Seeds
- 25 gms Edible Gum (Gond)
- 1+3+2+3 Teaspoons Ghee
- 1 Teaspoon Cardamom Powder
- 5 Tablespoons Maple Syrup adjust to taste
