I really like to make phyllo pastry cups at home as I can adjust their size according to my requirements. With mini muffin tin, I can make bite sized phyllo cups to use for appetizer, snacks or bite bite-sized dessert canapes or any finger food or regular muffin tin for each dessert or appetisers.
These yogurt cherry phyllo cups are a perfect dessert to include in a party menu. This light yet delicious dessert makes the menu well-balanced and avoids the wastage of food.
These little treats are an amazing dessert to include along with regular desserts such as strawberry apple crisp, fudge brownie and pumpkin halwa in case you are planning to have multiple desserts.
How to make mini phyllo cups?
Making phyllo cups at home is a simple and easy process with a store-bought phyllo pastry sheet. Always handle phyllo sheets carefully as these sheets are super thin they tear up easily.
Unused pastry sheets have to be covered with a damp cloth or clingfilm to prevent them from drying out. brush each phyllo pastry sheet with butter and cut them into squares, stack 2 squares in each mould of a muffin tin and bake until golden and crispy.
In this recipe I have used 2 squares for each cup, you may choose 5-6 squares to make each pastry cup.
Ingredients
For Phyllo Cups
Phyllo pastry sheets: 2
Melted butter: 2 tbsp
For yogurt mixture
Greek Yogurt: 1 cup
Sugar: 3 tbsp
Ground Cardamom: small pinch
For topping
Almonds: 1tsp (chopped)
Walnuts: 1tsp (chopped)
Glace cherries: 24
Instructions
How to bake phyllo pastry?
Preheat oven to 180C /Gas mark 5.
Meanwhile, take one sheet of phyllo pastry and cover the rest with a damp cloth to prevent them from drying out.
Take one filo pastry sheet, apply butter and cut it into 24 equal squares with each square about 2.5 x 2.5 inches.
Now apply butter to mini muffin tins moulds and place 2 squares on top of other with each at a slight angle to the one underneath in each mould of mini muffin tin.
Repeat with the rest of the pastry squares until all the moulds of the muffin tin are filled.
Place the mini muffin pan in the preheated oven.
Bake for 8-10 minutes until pastry cups are crisp and golden brown, allow them to cool down completely and then remove phyllo cups from the tin. Now crispy and crunchy baked mini phyllo cups are ready to be filled.
How to make yogurt filling?
Combine yogurt, sugar, ground cardamom, and mix until all ingredients blend well. Adjust sugar depending on how sour your yogurt is.
How to assemble phyllo cups dessert?
When ready to serve, fill each pastry cup ¾ th full with yogurt mixture (approximately 1 tsp), top it with nuts and finally place a glace cherry on top.

Tips and Tricks
You may stack up to 5-6 layers of phyllo sheet in each mould of a muffin tin to get extra thick phyllo cups.
Assemble the yogurt cherry phyllo cups just before you serve to prevent them from getting soggy and soft. Alternatively, let guests assemble themselves.
Be sure to apply melted butter to muffin tin moulds. This not only helps brown the phyllo cups it also helps to remove these cups from moulds.
Don't worry about making them look perfect as the phyllo sheet will fold over in different spots and sometimes it will stick out of muffin moulds.
Phyllo cups, yogurt mixture can be made well in advance. If you plan to make phyllo cups the night before a party then keep these cups uncovered in a cool and dry place to ensure they don't lose their crunchiness.
This easy phyllo cups recipe can be easily modified to include any fruits and nuts of your choice.
You may use dry roasted nuts to get a toasty flavour.
Variations and Substitutions
In this recipe I have used store-bought glace cherries you may swap it with fresh pitted cherries or cherry compote.
You may use a piping bag to fill the yogurt mixture in phyllo shells.
You may swap sugar with honey, maple syrup, coconut sugar or any sweetener of your choice.
For a vegan version, substitute dairy yogurt with coconut yogurt or any plant-based yogurt.
For a change of flavour, try coconut custard, mango mousse, cream cheese or whipped cream instead of yogurt.
You could top it up with vanilla almond granola instead of nuts for crunch and flavour.
FAQ
Phyllo cups are best when consumed fresh. While they can be stored for 3-4 days.
Make sure the homemade phyllo cups are fully cooled before storing them. This avoids condensation, which can cause sogginess.
Place the phyllo cups in an airtight container. This preserves their crispiness and prevents moisture absorption.
To stack the phyllo cups in the container, use a sheet of parchment paper or wax paper between each layer.
Keep the container away from direct sunlight in a cool, dry place. Exposure to heat and humidity can affect the texture of the phyllo cups.
I wouldn't suggest storing them in the fridge as the moisture in refrigerators can cause phyllo cups to lose their crispness.
