Step 1: Melt butter in a pan.

Step 2: Caramelise apple and set it aside in a bowl.

Substitutions And Variations

Vegan: For a vegan version, substitute butter with coconut oil.

Nuts and seeds: Try pecans, almonds, pumpkin seeds or sunflower seeds instead of walnuts to top apple porridge for a crunch.

Milk: You can substitute coconut milk with alternative plant based milk such as almond or oat milk.

  • 1 Steel Pot/Saucepan

Ingredients

1 Cup = 250ml ; 1 Tablespoon = 15ml ; 1 Teaspoon = 5ml

For caramelised apple

  • 20 gms (1.5 tablespoons) butter
  • 1 medium apple wash, core and dice into half inch pieces.
  • 1 teaspoon cinnamon
  • ¼ cup maple syrup

For porridge

Topping (optional)

  • 3-4 walnuts chopped

Instructions

  • Melt 20 gms (1.5 tablespoons) butter in a pan over medium heat.

  • Add 1 medium apple, diced and cook for a minute.

  • Now add 1 teaspoon cinnamon, ¼ cup maple syrup, stir well and cook for another 3-4 minutes until apples are just tender and sticky.

  • Switch the heat off and transfer caramelised apple to a bowl. Set the bowl aside.
  • In the same pan, add 120 gms (1 cup) rolled oats and 400 ml coconut milk.

  • Bring it to a simmer over medium high heat, stirring frequently.
  • Now stir in ¼ teaspoon cinnamon and 1 tablespoon maple syrup. Reduce the heat to medium low and cook for 4-7 minutes stirring frequently, until oats are soft and creamy.

  • Spoon porridge into bowls and top with caramelised apple and 3-4 walnuts.
