There is something about a warm bowl of porridge topped with soft, sticky cinnamon flavoured apples that makes a cold morning feel a lot better. This caramelised apple cinnamon oatmeal porridge is cooked in creamy coconut milk and sweetened only with maple syrup with no refined sugar needed.
Melt 20 gms (1.5 tablespoons) butter in a pan over medium heat.

Add 1 medium apple, diced and cook for a minute.

Now add 1 teaspoon cinnamon, ¼ cup maple syrup, stir well and cook for another 3-4 minutes until apples are just tender and sticky.

Switch the heat off and transfer caramelised apple to a bowl. Set the bowl aside.
In the same pan, add 120 gms (1 cup) rolled oats and 400 ml coconut milk.

Bring it to a simmer over medium high heat, stirring frequently.
Now stir in ¼ teaspoon cinnamon and 1 tablespoon maple syrup. Reduce the heat to medium low and cook for 4-7 minutes stirring frequently, until oats are soft and creamy.

Spoon porridge into bowls and top with caramelised apple and 3-4 walnuts.
