Autumn Apple Walnut Green Salad

This apple walnut feta salad makes a perfect festive side dish. Bursting with vibrant colours and a mix of sweet, tangy and crunchy flavours, it’s sure to become a new family favourite.

It is a fabulous dish to be on a meal plan and to serve the crowd. It is one of the easiest and quickest salads to put together with minimal prep and it’s a delicious way to boost your fiber intake.

Ingredients

  • For Dressing: Olive oil, lime juice, salt, pepper and maple syrup
  • Pantry Ingredients: Pumpkin seeds, walnuts and cranberries.
  • Perishable Ingredients: Fresh apple, mixed salad greens and feta cheese. I have used braeburn apple and a mix of radicchio, lettuce and frisse.

Step By Step Instructions

Step 1: In a small jar, combine olive oil, lime juice, salt, pepper and maple syrup.

Step 2: Seal the jar tightly with a lid and shake well until ingredients are fully blended.

Step 3: Remove the lid, taste and adjust the seasoning if needed. Keep the jar aside.

Step 4: In a wide bowl, spread salad greens, thinly sliced apple, toasted walnuts, pumpkin seeds and cranberries.

Step 5: Now sprinkle crumbled feta and drizzle the prepared dressing over the top.

Step 6: Toss gently until everything is well combined.

Substitutions and Variations

Greens: While the mixed greens taste best, you can also try baby spinach, arugula or kale.

Nuts: Try pecans or almonds if you are not a fan of walnuts.

Dried Fruits: Try raisins or dried apricots if you prefer something different from cranberries.

Sweetener: You can substitute maple syrup with any other sweetener, such as honey or agave syrup.

Apple: I used braeburn apples, but gala, pink lady or a mix of bramley and jazz apples also works well.

Storage

If you are planning this salad for meal prep or to serve a crowd, prepare and store the salad dressing in a clean jar in the fridge for up to 3 days in advance. Store salad greens, feta and apple separately in the fridge. Toss salad greens with freshly sliced apple, nuts, cranberries and dressing just before serving.

Tips and Tricks

Fresh: Always dress salad just before serving to keep salad greens fresh and crisp. If you prepare salad ahead of time, store the dressing separately and toss right before serving.

Apple: Slice an apple just before assembling the salad to prevent it from browning.

Dressing: Toss salad with dressing just before serving, as letting it sit for long can cause the greens to wilt.

  • 1 Small Jar with Lid
  • 1 Wide Bowl

Ingredients

1 Cup = 250ml ; 1 Tablespoon = 15ml ; 1 Teaspoon = 5ml

For Dressing

  • 2 Tablespoons Olive Oil
  • Juice from half Lemon/Lime adjust to taste
  • Salt as required
  • Pepper as required
  • 1 Tablespoon Maple Syrup as required

To Assemble Salad

  • 2 Cups (or) 70 gms Mixed Salad Greens wash and pat dry
  • 1 Apple wash and slice thinly
  • ¼ Cup (or) 30 gms Walnuts chop roughly
  • 2 Tablespoons (or) 25 gms Pumpkin Seeds
  • 2 Tablespoons (or) 30 gms Dried Cranberries
  • ¼ Cup (or) 35 gms Feta Cheese crumble
