How to make no bake chocolate almond balls?
In a mixing bowl, combine the desiccated coconut, almond flour, walnuts, cocolate chips and cocoa powder and mix well.
Now add maple syrup, peanut butter and mix with the spatula until well combined.
Once the mixture is well combined, use your hands to roll it into small balls.
Take small portions of the mixture with a spoon and roll it between your palms to form small, bite-sized balls.
Place the balls on a parchment paper lined baking sheet or a silicone sheet.
Repeat the process with the remaining mixture.

Tips and Tricks
Grease Your Hands: Rub a small amount of coconut oil into both palms before rolling the mixture into balls to avoid sticking.
Uniform Size: To ensure that the balls are the same in size as possible, use a little scoop or measuring spoon.
Make Ahead: These almond chocolate bites are perfect for making ahead of time for parties, snacking, or light desserts. Prepare them a day or two in advance and keep them chilled until ready to serve.
Good Quality Ingredients: Use good quality desiccated coconut and almond flour as they enhance the flavour and texture of your chocolate almond energy balls. Make sure they are fresh and well within their expiry date.
Adjust Consistency: If the mixture is too dry add a bit more maple syrup or coconut oil. If it's too wet, add more almond flour or desiccated coconut.
FAQ
Indeed, freezing is a fantastic way to extend the shelf life of energy bites. Energy balls can be frozen on a baking sheet until solid, and then transferred to a freezer-friendly container or ziplock bag. Be sure to thoroughly defrost them before serving. Use up in three months.
