The most challenging part of parenting is getting kids to eat nutritious food. As a result, many mothers have to get creative and find various ways to make healthy ingredients look appealing.
This recipe is my successful attempt at getting my kids to enjoy pumpkin seeds, sunflower seeds and dates.
While cooking with kids sounds lovely, kid's safety should be given the utmost importance. Do not allow kids to use sharp knives. The plastic knives specially designed for kids are a great alternative that reduces the chances of bad cuts. Refer safety disclaimer for more details.
Ingredients

- Pantry Ingredients: Desiccated coconut, sunflower seeds, pumpkin seeds, flaxmeal,
- Sweetener: We used maple syrup, but feel free to use any sweetener of your choice.
- Dates: Soft dates such as mejdool are the best option for this recipe.

Step by Step Instructions

Step 1: In a bowl, combine desiccated coconut, pumpkin seeds, sunflower seeds and maple syrup.
Step 2: Mix the ingredients well with a spoon until everything is thoroughly combined.
Step 3: Keep it aside to use later.

Step 4: Slit the dates lengthwise with a knife and remove the pit. (Skip this step if you use pitted/seedless dates).
Step 5: Using a small spoon, fill each date with prepared coconut stuffing.
Step 6: Place the stuffed dates on a plate and repeat the process for the remaining dates.

Super healthy coconut superseed stuffed dates are ready to enjoy.
Substitutions and Variations
Dry Fruits: Add raisins or dried cranberries for extra taste and flavour.
Sweetener: You could substitute maple syrup with honey or any other healthy sweetener of your choice.
Coconut: Try freshly grated coconut instead of desiccated if you have fresh coconut on hand.
Tips and Tricks
Caution: Do not allow a young kid to handle a sharp knife. Use only plastic knives designed for kids. Otherwise, adults have to pit the dates and allow the kid to do the stuffing.
Seeds: Make sure to chop the seeds if you are planning to serve these stuffed dates to toddlers.
Stuffing: Avoid overstuffing the dates, as it can make it harder for young kids to eat without making a mess.

1 Cup = 250ml ; 1 Tablespoon = 15ml ; 1 Teaspoon = 5ml
- 15 Medjool Dates
- 25 gms (or) ¼ Cup Desiccated Coconut
- 2 Teaspoons Maple Syrup adjust to taste
- 15 gms (or) 1.5 Tablespoon Pumpkin Seeds
- 16 gms (or) 1.5 Tablespoon Sunflower Seeds
