Fresh fruit salad with ginger lime dressing is a colourful and exotic salad that is great to have any time of the day from breakfast to dinner. It is a vegan and gluten free salad.

Simple fruit salad with dressing is a great way to consume fruits and foster healthy eating habits. It is a perfect crowd-pleaser dessert to include in the festive menu for Christmas easter halloween, new year and to take for potlucks. One large bowl of salad in itself is a light meal.

This classic fruit salad recipe is always refreshing whether it's summer, spring or winter. When making this salad use whatever fresh fruits are in season. There are no strict rules for the ingredients to use in this recipe so be creative and make your own salad with your favourite fruits.

The best part of this easy fruit salad is the simplicity of the dressing which is enhanced with ginger, lemon and cardamom. It adds just the right amount of lemon - gingery flavour to keep the salad fresh and refreshing. In this recipe, I have used apples, pear, strawberries, pomegranate, plums, pineapple and clementines.

What is ginger lime dressing?

This simple lemon and ginger infused dressing is made by simmering water, sugar, cinnamon, cardamom and ginger until syrupy. Remove from heat and mix in lemon juice, this will counteract the sweetness of the syrup and also stops the fruits from browning.

The dressing is essential as without it you just have an ordinary salad which doesn't actually require a recipe. Fruit salad is easy to put together and you can use whatever seasonal fruits you like but ginger lime dressing promotes the salad from ordinary to exotic.

Ingredients

For fruit salad

Apple: 1 cup, chopped (2 small size)

Pears: 1 cup, chopped (2 small size)

Plums: 3, pitted and chopped

Strawberries: 5 chopped

Pomegranate arils: 1 cup

Pineapple: 1 cup, chopped

Clementines: 2 small, peeled and segmented

For ginger lime dressing

Water: 1 cup

Sugar: ½ cup

Cinnamon: 1 inch stick

Cardamom pods: 2

Ginger: 1 tsp, peeled and chopped

Lime Juice: 2 tbsp

How to make ginger lime dressing?

For dressing place water, sugar in a saucepan and bring it to boil. Now add cinnamon, ginger and simmer for 8-10 minutes or until syrupy and turn off the heat.

Mix in lemon juice and leave the syrup to cool.

Strain the mixture and keep it aside.

How to make fresh fruit salad with dressing?

For the fruit salad, combine all the fruits in a large bowl.

Pour over the required syrup, stir gently until well combined.

Serve refreshing fresh fruit salad with ginger lime dressing in an individual bowls.

Notes

Any combination of fresh fruits will work for this salad.

The syrup can be made ahead and stored in the refrigerator until ready to use.

Use dressing as per your required taste.

The leftover lime ginger infused dressing may be used in cocktails, lemonade, iced tea, cakes, muffins.

Lemon ginger syrup thickens after cooling. The longer you boil, the thicker the syrup will be when cooled.

Substitutions and Variations

Substitute sugar with honey or maple syrup for a healthy salad.

Lime zest adds a pronounced flavour to the dressing.

Fresh fruits such as green or red grapes, mandarin oranges and fresh ripe mangoes make a lovely addition. Try using various fresh fruits rather than frozen fruits in this recipe.

Switch up the flavours of the dressing by using orange juice instead of lemon juice.

1 Cup = 250ml ; 1 Tablespoon = 15ml ; 1 Teaspoon = 5ml

    For fruit salad

    • 1 Cup Apple (2 small size) chopped
