This fabulous watermelon mint salad has a great flavour on its own, so a few refreshing ingredients and a bit of lime juice are all it needs to enhance the flavour. Unlike most salads, it doesn't require olive oil salad dressing, cheese or any exotic ingredients.
This vegan watermelon salad makes a good side dish for lunch or dinner, it even makes a great lunch on its own. This salad is easy to make and a perfect side dish for BBQ parties, potlucks or picnics.

Watermelon salad recipe variations
Add a refreshing cucumber to make it a watermelon cucumber salad.
You could add ripe avocado, honeydew melon or any other type of melon.
Consider basil or coriander if you would like watermelon salad without mint.
Almonds could be replaced with walnuts, melon seeds or pumpkin seeds.
A dash of maple syrup adds a lovely sweet and earthy flavour.
Transform it into peach watermelon salad by adding peach slices.

How to make watermelon mint salad?
In a large bowl, combine watermelon cubes, mint, lime juice, almonds, salt and pepper.
Toss until everything is well combined. Taste and adjust seasoning if necessary.
Serve vegan watermelon salad immediately.
Tips to make best watermelon salad
Always use chilled watermelon to make this salad as it tastes best when served chilled.
Do not add almonds if you have a nut allergy.
I would suggest using freshly squeezed lime or lemon juice instead of bottled juice as it imparts a refreshing flavour and taste.
Storage
Since watermelon is an extremely high water-content fruit, I wouldn't suggest storing this salad to use later. Because the salt results in the watermelon releasing excess moisture and getting soggy. Not only that the nuts go soggy as well. Instead, prep the watermelon and store it in the fridge, toss it with the rest of the ingredients just before you serve.
Alternatively, consider freezing the watermelon cubes if you are planning it for a party or include them in a meal plan.

Equipment
- 1 Large Bowl
- 1 Wooden Spoon
Ingredients
1 Cup = 250ml ; 1 Tablespoon = 15ml ; 1 Teaspoon = 5ml
- 540 gms (or) 3 cups Watermelon chopped
- handful Mint leaves chopped
- 50 gms (or) ⅓ cup Almonds sliced
- Lime juice from 1 lime (adjust to taste)
- Salt as required
- Crushed black pepper as required
Instructions
