The perfectly seasoned and crispy roasted chickpeas, paired with creamy avocado and fresh vegetables, will have your family coming back for more. The vibrant avocado lemon dressing takes this salad to the next level, making it even more delicious and enticing.
The key to crispy roasted chickpeas is getting them dry. After draining and rinsing the chickpeas, spread them out on a clean kitchen towel or paper towel and pat them dry. Removing moisture will help them crisp up better in the oven.
Ingredients
- For Roast Chickpea: Canned chickpea, olive oil, salt, paprika and cumin powder
- For Salad Dressing: Avocado, pumpkin seeds, salt, black pepper powder, greek yogurt, lemon juice, garlic and water
- For Salad: Red onion, cucumber, avocado, baby plum tomatoes and fresh mint leaves.

Step By Step Instructions
Step 1: Place chopped avocado, pumpkin seeds, garlic, salt, pepper and greek yogurt in a blender.
Step 2: Squeeze half a lemon and pour a dash of water.
Step 3: Blend it into a smooth sauce.
Step 4: Set it aside to use later.
Step 5: Preheat your oven to 400°F (200°C).
Step 6: Pat the chickpeas dry with a paper towel and place them on a lined baking sheet.
Step 7: Add olive oil, salt, cumin and chilli powder and toss until chickpeas are well coated.
Step 8: Spread on a baking sheet in a single layer and roast for 20-25 minutes until golden and crispy shaking the pan halfway through.
Step 9: Take the baking sheet out of the oven and set it aside.
Step 10: In a large bowl, combine chopped red onion, baby plum tomatoes, avocado and cucumber.
Step 11: Pour dressing over the vegetables and mix gently with spoons.
Step 12: Now add roasted chickpeas, mint and give it a good mix.
Serve roasted chickpea salad immediately for fresh flavour and texture.
Substitutions and Variations
Vegetables: Sweet corn, spinach, carrots, and bell peppers are great additions and add vibrant colour and flavour.
Nuts and Seeds: Add a handful of roast peanuts or sunflower seeds for crunch.
Vegan: For a vegan version, substitute greek yogurt with plant based yogurt.
Chickpeas: I used canned chickpeas, but feel free to cook dried chickpeas and use them.
Storage
If you plan to make this salad for meal prep or gatherings, except avocado, prep and store the other vegetables separately in clean and airtight containers in the fridge for up to 3 days.
Roast and store the chickpea in a clean and dry airtight jar at room temperature away from direct sunlight and moisture. Prepare dressing freshly and add freshly cut avocado and assemble the salad just before you are ready to serve.
Tips and Tricks
Dressing: Mix in dressing right before you serve salad to preserve the crunchy texture of roasted chickpeas.
Avocado: Use ripe avocado for a creamy texture. It should be ripe and firm but not mushy.
Chickpea: Ensure to pat dry chickpeas with a paper towel to help crisp them up during roasting.
Spread Chickpeas: Ensure the seasoned chickpeas are spread in a single layer on a lined baking sheet. They won't crisp up if they are too crowded.
Roasting: Gently shake the baking sheet halfway through roasting to ensure even roasting.

Ingredients
1 Cup = 250ml ; 1 Tablespoon = 15ml ; 1 Teaspoon = 5ml
For Dressing
- half Avocado medium size
- ¼ Cup Greek Yogurt
- Salt as required
- Black Pepper powder as required
- 2 Teaspoons Pumpkin Seeds
- 2 cloves Garlic peel
- 2 Tablespoons Olive Oil
- 1 Tablespoon Lemon
- ¼ Cup Water adjust to get right consistency
For Roasted Chickpea
- 1 Cup Canned Chickpea
- Salt as required
- ½ Teaspoon Red Chilli Powder
- ¼ Teaspoon Cumin Powder
For Salad
- 15 Baby Plum Tomatoes each cut into half
- half Avocado medium size

- 2 sprigs Fresh Mint Leaves wash and chop
