Dried Fruit: Dried apricots, use the ones without added sugar.

Pantry Ingredients: Peanut Butter and rolled oats. Use peanut butter with pourable consistency to make processing easier.

Sweetener: I used maple syrup, but you can substitute it with honey, agave syrup or any other healthy sweetener of your choice.

How To Make Apricot Peanut Butter Oat Bars?

Step 1: Line baking tin/tray with parchment/baking paper.

Step 2: Process all ingredients in the food processor until they come together into a sticky mixture.

Step 3: Transfer the mixture into a lined tin/tray.

Step 4: Place a parchment/baking paper on top, press the mixture down firmly and evenly with flat bottom glass or measuring cup.

Step 5: Garnish with chopped almond and chopped apricots.

Step 6: Refrigerate until firm.

Cut them into bars or any desired shape and enjoy. Store the remianing bars in an airtight container in the fridge.

Storage

Store individually wrapped bars in an airtight container in the fridge for up to a week or in the freezer for up to 2 months. Thaw them at room temperature for 15-20 minutes before serving.

Tips and Tricks

Parchment: Place parchment paper on top of mixture before pressing down with glass/measuring cup to prevent mixture from sticking to the base of glass/cup.

Press Firmly: It is a necessary step for the bars to hold together. So don’t rush, take time and make sure to press down firmly and evenly.

Test Mixture: The mixture should hold its shape when pressed between fingers.

Too Dry Mixture? If the mixture feels too dry or crumbly, add a bit of maple syrup and process again to get right consistency.

Yes, as long as you use certified gluten free oats as sometimes they can be cross contaminated with wheat during processing.

Why did no bake apricot bars crumble when I cut them?

1 Cup = 250ml ; 1 Tablespoon = 15ml ; 1 Teaspoon = 5ml

  • 390 gms (or) 1.5 cups dried apricot
  • 90 gms (or) ¾ cup rolled oats
  • 130 gms (or) ⅓ cup peanut butter
  • 60 gms (or) ¼ cup maple syrup adjust to your taste

For Topping (optional)

  • 6-8 almonds (optional) chopped
  • 2-3 slices dried apricot (optional) chopped

Instructions

  • Line 9×6 inch baking dish/pan with parchment/baking sheet leaving a little overhang on sides so you can lift it out easily later.
  • Add 390 gms (or) 1.5 cups dried apricot, 90 gms (or) ¾ cup rolled oats, 130 gms (or) ⅓ cup peanut butter and 60 gms (or) ¼ cup maple syrup into food processor and process until everything comes together into a clumpy and sticky mixture.

  • Transfer the mixture into lined baking dish and spread it with spatula.
  • Place parchment/baking sheet on top of the mixture. Using measuring cup or flat bottomed glass press the mixture down firmly and evenly.
  • Now top it with chopped 6-8 almonds (optional) and 2-3 slices dried apricot (optional). gently press with spatula.

  • Refrigerate for atleast 30-45 minutes until fully firm.
  • Lift the whole set holding the parchment overhang on sides, place on a board and cut into bars.
