Tips And Tricks
Tahini: Use good quality tahini for the best flavour. Look for a brand made from hulled sesame seeds with a light colour and pourable consistency. Avoid tahini that is thick or pasty.
Heat: Adjust chilli powder to suit your spice levels. It varies in heat levels between brands so start with half a teaspoon, taste and add more if you want a stronger kick.
Don’t Blend: Either use fork or whisk. Blending can make the sauce too thin.
