Its silky, smooth, and creamy texture is perfect for those who may not enjoy the texture of carrots or sweet potatoes. The blend of spices and coconut milk adds fantastic flavour and enhances the taste of soup.
This wholesome, satisfying vegetarian soup is incredibly versatile and pairs wonderfully with garlic bread, dinner rolls, roast vegetables or a simple side salad such as corn cucumber tomato salad, no mayo coleslaw or chickpea salad.
Ingredients
- Vegetables: Sweet potatoes, carrot, onion, garlic and ginger.
- Spices and Herbs: Black pepper powder, cumin powder and salt.
- Liquid: Water, oil and coconut milk. I have used olive oil but feel free to use any cooking oil that you use in your kitchen if you prefer.
- Toppings: Pumpkin seeds, desiccated coconut and dried parsley.

Step By Step Instructions
Step 1: Peel and chop sweet potatoes, carrot, onion, ginger and garlic.
Step 2: Heat oil in a pot over medium heat.
Step 3: Once the oil is hot, add onion and saute for 5 minutes until soft and translucent.
Step 4: Add ginger and garlic and cook for another 1-2 minutes until aromatic.
Step 5: Add chopped sweet potato and carrot to the pot, and stir well.
Step 6: Now add salt, pepper and cumin powder, and mix well.
Step 7: Pour water making sure vegetables are fully covered and bring it to a boil.
Step 8: Close the pot with a lid and simmer for 20-25 minutes until sweet potatoes soften.
Step 9: Take the lid off the pot, pick a sweet potato with a ladle, and press with a spoon to check if it is tender and well-cooked.
Step 10: Switch the heat off and pour coconut milk.
Step 11: Using an immersion blender, puree the soup until smooth and silky.
Ladle the soup into bowls and garnish with pumpkin seeds, desiccated coconut and parsley.

Substitutions and Variations
Spices: Try curry powder or garam masala instead of cumin powder for flavour variation.
Lemon Juice: Add a splash of lime juice to bring some zing and help balance the sweetness of the sweet potato.
Vegetables: Add more vegetables such as celery, spring onion and leek for added nutrients and flavours.
Stock: Use vegetable stock instead of water to enhance the flavour.
Storage
Fridge: This instant pot vegetable lentil soup stays good for 3 days in the fridge if stored properly in an airtight container.
Freezer: Consider the freezing option for a longer shelf life. This carrot sweet potato soup could be stored in the freezer for up to 3 months. Divide and store in the freezer in a freezer-friendly airtight container or zip-lock bags.
Reheat: Keep it in the fridge overnight to defrost. Reheat in the microwave or on the stovetop until piping hot.
Tips and Tricks
Blend: Use a high-speed blender or powerful immersion blender to blend the soup to get a smooth texture.
Chunky Soup: If you prefer a chunkier texture, leave some sweet potato pieces intact.
Coconut Milk: I used low-fat coconut milk, but you can go for regular coconut milk if you want extra creaminess and aren't worried about the extra calories.
Consistency: Adjust the liquid depending on your required consistency. Add less stock for thick soup and a little more for thin soup.

Equipment
- 1 Ceramic Pot
- 1 Ladle
Ingredients
1 Cup = 250ml ; 1 Tablespoon = 15ml ; 1 Teaspoon = 5ml
- 1 Teaspoon Olive Oil
- 1 medium (or) ¾ Cup Onion peel and chop finely
- 1 inch Ginger peel and chop finely
- 2 cloves Garlic peel and chop finely
- 1 medium (or) ½ Cup Carrot wash, peel and chop
- 475 gms (or) 3 cups Sweet Potatoes wash, peel and dice into bite size pieces
- Salt as required
- ½ Teaspoon Cumin Powder
- Pepper Powder as required
- 3 Cups Water adjust to get your desired consistency
- 1 Cup Coconut Milk adjust to get your desired consistency
- 1 Teaspoon Dried Parsley
- 1 Tablespoon Pumpkin Seeds
- 1 Tablespoon Desiccated Coconut
