Masala Oats Recipe (Savoury Oats Porridge)

Masala oats recipe is a vegan and healthy breakfast recipe. Savoury oats porridge is a quick and easy-to-make dish loaded with vegetables and flavourful spices and it gets ready in just 15 minutes.

A warm bowl of vegetable masala oats and a cup of hot chocolate or a glass of smoothie makes a filling, super-efficient, energetic and fuss-free breakfast.  Check out more porridge recipes on the blog: Warm Chia Porridge, Flaxseed Porridge and millet porridge.

We prefer oats for breakfast as they are the nutritional powerhouse packed with important micronutrients and will keep us full for a few hours after breakfast. Though sweet breakfast oats such as chocolate baked oats, banana chocolate overnight oats, mango overnight oats and banana oatmeal smoothie are popular choices, this savoury version of Indian oatmeal aka oats upma tastes equally delicious with vegetables. 

Savoury vegetable oats porridge recipe variations

You could add more vegetables such as broccoli, corn, spinach, potato, bell pepper. This is an ideal recipe to use up any leftover cooked veggies such as boiled potatoes, leftover roast vegetables such as air fried baby potatoes, roasted turnips, potato wedges and stir-fried veggies.

Feel free to add a teaspoon garam masala powder or cumin powder and coriander powder to make it more flavourful and spicy oatmeal.

Add a few green chillies for extra spicy porridge.

This is a very simple recipe with minimal ingredients. But you could add onion and ginger garlic paste. Saute them before cooking vegetables. 

Ingredients

Oats: I've used quick-cooking oats. You can use rolled oats or steel-cut oats. Although the cooking time varies it tastes equally tasty.

Vegetables: carrot, beans, peas, coriander are used here.

Dry spices: I've used basic Indian spices - cumin, dry red chillies, turmeric, chilli powder.

Liquids: oil to cook vegetables, spices and water to cook oats.

How to make indian masala oats?

Heat oil in a skillet on medium heat, add cumin and let it crackle.

Add red chillies and saute for few seconds until it is aromatic.

Now add carrots followed by beans and green peas, saute and cook for 2 minutes or until vegetables are tender.

Now add oats and saute for a minute.

Add one and a half cups water, mix well and cook for 5 minutes or until water is almost absorbed by oats and you get desired consistency. 

Finally, add coriander and turn off the heat.

Enjoy hot and delicious masala porridge.

Notes

Feel free to use up old random veggies lying in the refrigerator that is about to end up in the trash. This way you can have less waste and save money.

You could add cumin powder, coriander powder or garam masala to add more flavours to the porridge.

Adjust water as per your required consistency.

Ingredients

1 Cup = 250ml ; 1 Tablespoon = 15ml ; 1 Teaspoon = 5ml

  • 2 Tablespoon Oil
  • 1 Teaspoon Cumin
  • 2 Dry red chillies broken
  • 1 Carrot finely chopped
  • 5 Beans finely chopped
  • ¼ cup Green peas
  • Turmeric a pinch
  • 1 Teaspoon Chilli powder
  • 1 cup Oats
  • 1.5 cups Water
  • Coriander handful (chopped)
  • Salt as required

Instructions

  • Heat oil in a skillet on medium heat, add cumin and let it crackle.

  • Add water, mix well and cook for 5 minutes or until water is almost absorbed by oats and you get desired consistency.

  • Finally, add coriander and turn off the heat.

  • Enjoy hot and delicious savoury oats.

    When I make savory oats, it's usually based on Chinese porridge, the kind you get from dim sum restaurant. But your version looks very delicious too, and I will give it a try. 🙂
