Indian mango lassi is one of the most preferred drinks in Indian restaurants with meals. The traditional mango lassi is made with fresh juicy mangoes. However, this is a restaurant style recipe made with ready to use mango pulp.

The best part is you don't need to wait until the next mango season to make this delicious mango-flavoured drink. Any yogurt could be used but using greek yogurt has the added advantage of contributing to the thickness and creaminess of the drink.

Lassi is one of the best summer drinks to prevent dehydration. Among various flavoured lassis such as masala lassi, rose lassi, salt lassi and sweet lassi, mango lassi is one of the favourite and most preferred beverages in India during summer which is coincidentally a mango season. This classic drink is the perfect accompaniment to spicy food such as paneer jalfrezi, kadai paneer and vegetable chettinad.

How to make delicious mango lassi?

Making mango lassi at home is easy without any prep time. It's a pretty straightforward procedure - add all ingredients in the blender and blend until smooth and well combined.

The texture and creaminess of lassi depend on the quality of the yogurt we use. I would suggest you use full-fat natural yogurt or greek yogurt. You may not get a creamy and silky texture with low-fat yogurt rather you will have a little sour and thin lassi.

Always use chilled yogurt and mango pulp to make sure the lassi is cold but doesn't water it down. Do not use ice cubes as they make lassi thin pretty quickly.

Mango Lassi Recipe Variations

A dash of rose water or kewra water enhances the flavour. Use it instead of cardamom powder.

Swap agave or maple syrup for refined sugar as a healthier option.

For a vegan mango lassi, substitute dairy milk and whole milk yogurt with unsweetened non-dairy milk such as almond milk, coconut milk or say milk. Replace dairy yogurt with a nondairy version. You could sprinkle a few chopped cashews or pistachios along with almonds on top of the lassi.

Fresh mangoes could be used instead of pulp when they are in season. Ensure to use nonfibrous sweet mangoes.

Plain greek yogurt could be used instead of regular whole yogurt.

Ingredients

yogurt, milk, sugar, cardamom, almonds and mango pulp placed on a wooden table.

Notes

Add little more milk while blending for slightly thin consistency.

Adjust sugar based on sweetness of the mango pulp.

Cardamom powder enhances the flavour. You could swap dash of rose-water for cardamom powder.

Mango pulp can be substituted with frozen mangoes or fresh mangoes.

FAQ

What is lassi?

Lassi is a popular yogurt based versatile drink that can be served either sweet or savoury. Traditional lassi is just a blend of yogurt, water, salt and is perfect to quench thirst in summer.

Traditionally lassi is prepared by vigorously whisking the yogurt with a hand-held wooden churner until the creamy froth is produced.

What is mango lassi?

A very popular mango lassi is a mango flavoured yogurt drink made with either mango pulp or fresh mangoes and yogurt with an optional flavour enhancer such as cardamom and rose water.

Which type of mangoes are best for mango lassi?

Indian mango varieties such as alphonso and kesar yield best tasting lassi. However, any mangoes could be used as long as they are not fibrous and are sweet and juicy.

How to tell when mangoes are ripe?

The common method to determine the ripeness of mango is the skin colour. For ripe mango, the skin turns from green to deep orange or yellow depending on the variety.

However, not every variety changes the colour.  So the other ways to find the ripeness of mango are:
1. Sniff the stem to check the aroma. The extremely sweet aroma indicates the mango is ripe.
2. It is ripe and ready to eat if it feels soft when gently pressed with fingertips.
