Zucchinis, also known as courgettes, are highly versatile vegetables that have a mild flavor and readily absorb the flavours of other ingredients. They can be used in a variety of dishes, from pasta and curries to breads and stir-fries. Additionally, they can be transformed into low-carb zoodles as a pasta substitute.

I have used gram flour to make this recipe gluten free. Gram flour is essential for binding the fritters together and maintaining their shape. It is added to masala peanuts for the crispy coating on the outside. Many Indian recipes, such as cabbage pakoda, bombay chutney, vegetable pakoda, lauki kofta curry, and seven cups burfi, use it as a primary ingredient.

How to make zucchini corn fritters
Defrost frozen sweet corn kernels by placing them in a bowl of water.
In the meantime, wash and grate fresh zucchini with a box grater.
Place grated zucchini in a strainer and press with the back of the spoon to remove the excess water.
Save the squeezed zucchini and discard the water for later use.
Clean, peel, shred the carrot and set it aside.
Remove the water and set the corn aside.
Place shredded zucchini, corn, carrot, garlic, salt, freshly ground black pepper, and cumin powder in a large bowl. Mix well with a spoon.
Add gram flour and mix thoroughly until well combined.
Taste it and add salt or spices if necessary.
Line the air fryer basket with parchment paper.
Apply oil to palms.
Take a lime-sized amount of the mixture and shape it into patties using your palm.
Place them in the basket, then apply oil by brushing each fritter or using cooking spray.
Place the basket in the air fryer and set the temperature to 180 C (375F) for 10 minutes.
After the air fryer beeps, take out the basket. Gently flip the fritters with spatula, put the basket back in the air fryer and cook for another 5 minutes.
After the timer goes off, turn off the air fryer and remove the basket.
Indulge in delectable air fryer zucchini fritters, and dip them in your favourite sauce for added flavour.

Substitutions and Variations
Garlic powder or granules could be substituted for fresh garlic.
To give the air fryer zucchini corn fritters an Indian flavor, swap out cumin powder for garam masala and add a pinch of lemon juice.
You could use fresh rosemary, thyme or dill instead of parsley.

Tips and Tricks
A cheesecloth can also be used instead of a strainer. Extract as much liquid as possible from grated zucchini by placing it in a cheesecloth and squeezing.
Place the fritters in the basket in a single layer with enough space between each one to cook them properly. Cook them in batches if required, rather than overloading the basket.
To ensure the zucchini fritters are well-fried, don't forget to remove the basket and flip them halfway through cooking.
Make cleaning less of a hassle by lining the air fryer with a baking sheet or parchment paper.
For frying fritters uniformly, shaping them into the same size is necessary. The cooking duration for the fritters depends on their thickness. The thin fritters cook quicker than thick ones and get crispy faster.
Keep an eye on the cooking time of later batches, as they will likely cook faster due to the preheated air fryer.
Number of fritters you get depends on the size of the fritters you make.
