Mango overnight oats - an incredibly easy to make breakfast and an easy way to start the busy mornings. This no cooking, no mess and no fuss overnight oats recipe is like a dessert in a jar, a full meal in itself with all healthy ingredients.

Not only are these overnight oats quick and easy to make but they are also extremely versatile. You can customise it with endless variations which help to keep breakfast interesting and satisfying. It's a perfect grab-and-go breakfast. Preparing overnight oats takes hardly 5 minutes the previous night, and in the morning they are ready! 

On warm days, overnight oats is one of the best breakfasts as you can eat it straight from the fridge. 

Ingredients

Oats: Rolled oats, quick-cooking oats or old-fashioned oats. I’ve used rolled oats in this recipe.

Milk: I use skimmed dairy milk, full-fat milk can be used instead.

Fruit: I use store-bought mango pulp. Feel free to use fresh mango if it’s in season.

Sweetener: I don't use any sweetener as the sweetness from mango pulp is enough for me. Honey, brown sugar or maple syrup can be used in case you need to sweeten up your oats.

Toppings: Fresh mango, almonds, walnuts, raisins, dried apricots, and dried cranberries make a great topping. Use whatever you have on hand.

Spices & Flavours: Vanilla extract and cinnamon are used to enhance the flavour.

Instructions

Soak the oats overnight with the spices and milk in a jar.

Assemble the soaked oats and mango pulp. Layer the ingredients to the top of the glass.

Top up the last layer with chopped nuts and dried fruits.

Variations

Flax meal makes a healthy addition. 

Try adding pumpkin seeds, melon seeds or coconut chips as toppings for a crunch and added flavour.

Chia seeds make a lovely addition. 

A layer of greek yogurt makes a great addition too.

Substitutions

Spices such as nutmeg or ginger could be substituted for cinnamon.

For the vegan version, use coconut milk, almond milk, soy milk or any plant-based milk.

Mango pulp can be replaced with frozen or freshly chopped mango cubes. 

Tips and Tricks

Adjust milk and mango pulp as per your preferred taste.

Once you take the oats jar from the fridge, you can let it sit on the counter for 10-15 minutes to take the chill off.

On busy mornings or when you are short of time, mix all the ingredients including dried fruits in a jar and keep it overnight. The next morning you grab the jar, add the nuts and enjoy your breakfast on the go.

Add sufficient milk as the oats absorb it. Insufficient milk can result in a thick substance rather than creamy, spoonable porridge-like oats. 

Serving Suggestions

Mango overnight oats is a great breakfast to kick start the busy weekday. 

Great as a grab-and-go breakfast.

Good fruity breakfast if you are craving a sweet yet healthy breakfast. 

Endless options to customise to suit your taste preference.

Storage

Overnight oats can be stored for up to 5 days in the fridge in an airtight jar. Consider storing it in the freezer for longer shelf life.

FAQs

How long overnight oats should be soaked?

Soak at least for 10 hours. The more you soak, the creamier the oats would be.

What type of oats is best for overnight oats?

Rolled oats are better than quick oats. Quick oats are thin so they tend to get mushy if soaked for a longer time. Overnight oats made with quick oats taste good as long as you are ok with the texture. 

Can I freeze overnight oats?

Yes! Freezing overnight oats is a great option for longer shelf life. Freeze just oats and milk in a freezer-friendly individual container, and hold on to the spices as they alter the taste of the oats when stored for a longer time. It's best to add spices and your preferred toppings just before you plan to eat. 
To thaw, take the required portions out of the freezer and keep them in the fridge overnight.  

Can overnight oats be eaten warm?

Yes. Although overnight oats are usually served chilled, warm oats taste equally good. Heat it in a microwave. Ensure to use a microwave-safe jar.

Will oats expand as they soak?

Yes, oats absorb the liquid around them and expand, though not as much as cooked oats. So do not fill the jar to the brim as they need room to expand.

Ingredients

1 Cup = 250ml ; 1 Tablespoon =15ml ; 1 Teaspoon = 5ml

  • ½ cup Oats
  • ½ cup Milk
  • ¼ Teaspoon Ground Cinnamon
  • ½ Teaspoon Vanilla Extract
  • ½ cup Mango Pulp
  • few Almonds chopped
  • few Cashews chopped
  • handful Fresh Ripe Mango chopped

Instructions

  • Combine oats, milk, vanilla extract and ground cinnamon in a jar, mix well, close the lid and store in the fridge overnight.
    ½ cup Oats, ½ cup Milk, ¼ Teaspoon Ground Cinnamon, ½ Teaspoon Vanilla Extract
  • Next morning or whenever you plan to eat it, take the jar out of the fridge.
  • To assemble, place the spoonful of soaked oats at the bottom of glass or bowl.
  • Spread the mango pulp as the second layer.
    ½ cup Mango Pulp
  • Make the layers with soaked oats and mango pulp until the top of the glass.
  • Top up the last layer with chopped nuts and mango cubes.

Notes
