A mushroom spinach sandwich is a delicious and nutritious meal option that combines earthy mushrooms with vibrant spinach, all packed between slices of bread.

This simple mushroom spinach sandwich is perfect to pack in a lunchbox or as an evening snack with chai or brunch.

  • Spinach: I used fresh baby spinach here.
  • Mushrooms: I used button mushrooms but feel free to use any other variety.
  • Seasoning: Salt and crushed black pepper.
  • Dairy and Liquid: Grated cheddar cheese, butter and olive oil.

How to make mushroom spinach sandwich?

Heat olive oil in a skillet over medium heat. 

Add the sliced mushrooms and salt to the skillet. Cook, stirring occasionally, until the mushrooms are tender and browned, about 4-5 minutes.

Now add the fresh baby spinach leaves. Cook until wilted, about 1-2 minutes.

Season with black pepper and switch the heat off.

Stir in cheese and set it aside.

Apply butter to the bread slices, place the sautéed spinach mushroom mixture on one slice of bread.

Top with the other slice of bread and press it in a sandwich maker or panini press until golden brown.

Slice the sandwich in half and serve immediately.

Substitutions and Variations

Bread Variations: I choose whole grain bread you could use sourdough or multigrain bread for added nutrition and a nuttier taste. Alternatively, go for a baguette, panini or ciabatta roll for a different texture instead of regular sliced bread. 

Vegan Option: Choose plant based butter and cheese instead of dairy products.

Mix up the Mushrooms: Experiment with different types of mushrooms to add variety to your sandwich. Try using a mix of button, cremini, and shiitake mushrooms for a more complex flavour profile.

Serving Suggestions

Accompaniments: Serve a spinach mushroom sandwich with a side of baked potato wedgessweet potato wedges, or a small cup of vegetable soup for a complete meal.

Lunchbox: Perfect to pack in a lunch box along with cucumber corn tomato salad or avocado mango salad.

This sandwich tastes best when freshly made and piping hot or within 5 hours if packed in an insulated lunchbox. Wrap it with aluminium foil or a baking sheet to prevent condensation.

If you’re short on time, you can prepare the sauteed mushroom and spinach without cheese in advance and store them in the refrigerator. Assemble the sandwich with premade mushroom spinach mixture, top it with cheese and grill when you’re ready to eat or to pack in a lunchbox.

Rest Before Cutting: After taking the sandwich out of the sandwich maker, let it rest for a minute to rest. This slightly settles the cheese, which makes it easier to cut without anything spilling out.

Salt: Be careful when adding salt because tomato ketchup and spreadable butter both contain salt.

Place the sandwich on a skillet after lightly spreading butter or brushing both of the bread’s outer sides with olive oil. Toast the sandwich at medium heat.  Cover it with a lid while cooking to trap heat and help melt the cheese faster.

1 Cup = 250ml ; 1 Tablespoon = 15ml ; 1 Teaspoon = 5ml

  • 1 Teaspoon Olive Oil
  • 115 gms (or) 1 Cup Button Mushrooms
  • 25 gms (or) 1 Cup Fresh Spinach
  • Salt as required
  • Black Pepper Powder as required
  • 40 gms (or) 2 Tablespoons Cheddar Cheese grated
  • 1 Tablespoon Spreadable Butter
  • 4 Wholewheat Bread Slices

Instructions

  • Heat olive oil in a skillet over medium heat.

    25 gms (or) 1 Cup Fresh Spinach
  • Cook until wilted, about 1-2 minutes.
  • Season with black pepper and switch the heat off.

    40 gms (or) 2 Tablespoons Cheddar Cheese
  • Apply butter to the bread slices, place the sautéed spinach mushroom mixture on one slice of bread.
    1 Tablespoon Spreadable Butter, 4 Wholewheat Bread Slices
  • Top with the other slice of bread and press it in a sandwich maker or panini press until golden brown.
  • Slice the sandwich in half and serve immediately.
