Some days call for a proper pick me up and this homemade spiced iced tea is exactly that. The strong back tea base, with warmth from whole spices and fresh lemon juice keeps it light and thirst quenching rather than heavy.
This is the tea I make when I want something a bit more depth than a plain tea, but still cold, sharp and enjoyable on warm days. A few more summer drinks I love during scorching hot summer are Cold Brew Green Tea, Iced London Fog Tea, Homemade Peach Green Tea Lemonade.

Step 1: Simmer spices and ginger in a pot of water.

Step 2: Add tea bags and steep.

Step 3: Stir in sweetener and lemon juice.

Step 4: Strain and chill until ready to serve.
Step 5: Pour over a glass of ice and lemon slices and garnish with mint leaves.

Sweetener: You can swap lemon ginger honey with regular honey.
Spices: Add a couple of cloves and a small piece of star anise to make tea spicier and stronger.

Tips and Tricks
Don’t Oversteep: Black tea can turn bitter if steeped too long, especially with spices which intensify, so keep an eye on it and remove tea bags after 5-7 minutes.
Lemon Juice: Add lemon juice when tea has cooled slightly, not while it’s boiling, to prevent tea from turning bitter.
Sweetener: Stir in honey while tea is still hot so it dissolves fully.
Crush Cardamom and Pepper: Crush cardamom and pepper corns to release their maximum flavour.

- 1 Steel Pot/Saucepan with Lid
- 1 Spoon
- 1 Pitcher
- 1 Tea Strainer
Ingredients
1 Cup = 250ml ; 1 Tablespoon = 15ml ; 1 Teaspoon = 5ml
- 3 cups water
- 1.5 inch ginger peel and chop
- 2 green cardamom crush
- 1 inch cinnamon
- 3-4 peppercorn crush
- 3 tea bags
- 1.5 teaspoons honey adjust to taste
- 1 lemon extract juice
- 2-3 lemon slices (optional)
- few mint leaves (optional)
Instructions
- In a saucepan, bring 3 cups water to boil over medium heat.3 cups water
- Reduce the heat, add 1.5 inch ginger, 2 green cardamom, 1 inch cinnamon, 3-4 peppercorn and simmer for 5 minutes so the spices start to release their flavours.
- Switch the heat off, stir in 1.5 teaspoons honey, add 3 tea bags and steep for 5-7 minutes.
- Stir in 1 lemon juice and remove teabags.
- Place tea strainer over pitcher, pour tea to strain spices.
- Allow tea to cool completely. Refrigerate until ready to serve.
- Place ice cubes and lemon slices in a glass, pour tea over ice cubes and garnish with mint leaves if you like.
