Mango Chilli Peanut Butter Dressing

Mango chilli peanut butter dressing is a sweet, spicy and creamy condiment that comes together in 5 minutes with no cooking required. It is gluten free and vegan condiment perfect to drizzle over salads and also works as a sauce or dip. It is a vegan and nut free recipe.

This recipe started as an innovative way to use up a mango on the counter that was going soft and now it has become one of those recipes I come back to for it’s versatility – as a dressing or dipping sauce.

A quick note on the name – I call it dressing as that’s how I use it most of the times but it works just as well as a sauce or dip. Keep it thick for dipping vegetable spring rolls or vegetable sticks, or thin it out with a splash of water to drizzle over salads, wraps and noodles. Same recipe just adjust the consistency to serve what you’re serving it with.

The best part of this recipe is that it doesn’t involve any cooking so no fuss. All ingredients goes into a blender, processed and gets ready in 5 minutes. Natural sweetness from mango does heavy lifting without needing any additional sweetener.

How To Make Mango Chilli Peanut Butter Dressing?

Step 1: Peel, roughly chop mango and discard stone.

Step 2: Add all ingredients into blender.

Step 3: Process until smooth.

Variations and Substitutions

Chillies: You can use dried red chillies or chilli sauce instead of flakes.

Mango: Frozen mango or pulp can be used if fresh mangoes aren’t in season.

Storage

Store this mango chilli peanut sauce in an airtight jar for upto 5 days in the fridge. It will thicken as it chills, so give it a good stir before serving.

Tips and Tricks

Ripe Mangoes: Use ripe mangoes for best flavour and natural sweetness. A ripe mango needs a little to no sweetener.

Chillies: Start with less chillies than you think you would need as you can always add more but you can’t take it out if it’s too spicy.

Consistency: Adjust thickness for how you’re using it. Thin it with a splash of water for pourable consistency and keep it thick for dipping.

FAQ

Can I make mango this without a blender?

Yes, mash mangoes and whisk with finely chopped garlic, ginger and other ingredients. The texture will be less smooth but tastes delicious.

Is this dressing spicy?

It is spicy, but adjust chilli flakes to suit your spice preference. Add more chillies or reduce to adjust the heat.

Equipment

  • 1 Blender

Ingredients

1 Cup = 250ml ; 1 Tablespoon = 15ml ; 1 Teaspoon = 5ml

  • 1 large (or) 250 gms fresh ripe mango remove stone, peel and dice into cubes
  • 1 teaspoon red chilli flakes adjust to suit your taste
  • ½ inch ginger wash and peel skin
  • 1 clove garlic peel
  • 1 teaspoon soy sauce
  • juice from 1 lemon adjust to taste
  • cup peanut butter
  • ¼ cup water (optional) adjust to get right consistency

Instructions

  • Add 1 large (or) 250 gms fresh ripe mango, 1 teaspoon red chilli flakes, ½ inch ginger, 1 clove garlic, 1 teaspoon soy sauce, juice from 1 lemon and ⅓ cup peanut butter to a blender.
  • Blend until smooth and creamy, scraping down the sides as needed.
  • Taste and adjust with more chilli, lemon juice, soy sauce, ginger and garlic to the blender.
  • Use it as a dip or store in the fridge in an airtight container.
  • For dressing, add water, 1-2 tablespoons at a time to reach desired consistency.
