Rose lassi is a perfect yogurt-based drink flavoured with homemade rose syrup made with just 3 main ingredients. A great way to quench thirst on hot summer days.
Super refreshing, fragrant and delicious rose flavoured lassi is perfect to serve guests on special occasions. The exciting and irresistible flavours of this lovely pink-hued lassi is sure to impress your guests and bound to make your occasion extra special.
Making lassi at home is quick and easy, but making perfect lassi might be a little tricky. Yogurt and milk are the two main ingredients that I consider as deciding factors of a perfect lassi. The texture and creaminess of lassi depend on the quality of the yogurt we use. The ratio of milk and yogurt decides the rich and perfectly thick consistency of lassi. I suggest using greek yogurt or any thick natural yogurt and do not use any ice cubes after blending as it alters the lassi consistency. Instead, chill lassi in the refrigerator before serving.

What is lassi?
Lassi is a traditional yogurt-based probiotic Indian drink and is most preferred on hot summer days to quench the thirst and to keep the body hydrated. Among various versions, the basic salt lassi and sweet lassi are common in Indian households and consumed almost everyday specifically during summer as they are made of basic ingredients that are mostly present at home.
For the salt lassi, all you need is yogurt, salt, water, and roasted cumin powder. Various savoury versions such as masala lassi are made with additional ingredients. Simple sweet lassi is made of yogurt, sweetener, water/milk and different varieties of flavoured lassi such as mango lassi are made with added fruits/flavouring agents and warm spices.
Ingredients
Yogurt: Full fat (whole milk) yogurt tastes best. Use either Greek or natural yogurt. I wouldn't suggest low-fat yogurt as you won't get creamy lassi.
Rose Syrup: I have used homemade rose syrup. Feel free to use store-bought syrup.
Cardamom: Crushed cardamom adds a lovely flavour and taste.
Milk (optional): It is to adjust consistency.
Nuts (optional): Pistachios and almonds to garnish.
Edible dried rose petals (optional): few to garnish.
How to make rose lassi?
Place yogurt, rose syrup and cardamom in a blender.
Blend until lassi becomes smooth and frothy.
Check the consistency and add milk if necessary to thin the lassi down a bit.
Pour lassi in glasses, garnish with dry fruits (pistachios, almonds) and rose petals.
Serve refreshing, fragrant and delicious rose lassi.
Variations
Add gulkand for intense rose flavour.
Use a pinch of cinnamon for a touch of spice instead of cardamom.
A dash of rose water enhances the fragrance.
You could add a little honey or sugar to sweeten the lassi (I didn't add any as the rose syrup has enough sweetness to suit my family’s taste).
Substitutions
Homemade rose syrup could be substituted with store-bought ones such as rooh afza. You might have to cut down rose syrup if using store-bought stuff. I would suggest adding half the quantity required and checking the sweetness and fragrance of rose syrup after blending. Add more if necessary.
For the vegan version, use plant-based yogurt and milk instead of dairy ones.
Serving Suggestions
Serve it along with a meal or after a spicy meal such as kadai paneer, paneer majestic, paneer jalfrezi, aloo 65, vegetable rice, tomato bath to compensate for the spiciness.

Great on its own anytime as a refreshing drink.
Perfect drink to serve guests or to have on a party menu.
Enjoy it along with breakfast or snacks.
Tips and Tricks to make a perfect lassi
Milk is optional so either omit it or adjust while blending depending on your required consistency. You may have to add milk if you use full-fat Greek yogurt.
Add a little more milk to get a slightly thin consistent lassi if you think lassi is too thick and creamy for your taste.
Keep lassi in the fridge if you wish to serve later.
It doesn’t really matter whether you use homemade yogurt or store-bought but ensure it is not sour.
As I have used homemade rose syrup(didn't add any artificial food colouring) the lassi has turned light pink, lassi might turn bright and vibrant pink with store-bought rose syrup as it has artificial food colouring. Check out the homemade rose syrup recipe on the blog as a part of rose milk tea.
Why is lassi not thick and creamy?
Do not use low-fat or no-fat yogurt in this recipe as they don’t provide a thick and creamy texture due to lack of fat. Ensure to use full-fat yogurt (whole milk yogurt). The higher the fat content creamier and thicker the lassi will be.
Do not use any ice cubes as they dilute the lassi. Either use chilled yogurt or keep lassi in the fridge until chilled and then serve.
Storage
Lassi stays good for up to 2 days in the fridge if stored properly.
I wouldn't suggest storing it in the freezer as this yogurt drink doesn't stand up well for freezing.

I really want to make this as I love roses and rose-flavoured things. How do I make rose petals dried and edible? My mum grows roses in the garden - can I not wash and use these?

Janani, yes absolutely you can use fresh rose petals from garden. You don't necessarily need dried petals to make rose syrup. Ensure fresh roses are free of chemicals, wash and use instead of dried petals to make syrup. I would suggest using red roses to get that vibrant coloured syrup.
