Rose Lassi (Flavoured yogurt drink recipe)

Rose lassi is a super refreshing, fragrant and delicious yogurt drink that is perfect on any special occasion. In general any lassi such as mango lassi, masala lassi, dry fruit lassi or just plain lassi is well-known as thirst quencher during summer. Along with lassi chilled smoothies and milkshakes such as Pineapple Banana Smoothie, Strawberry Banana Milkshake are kid’s approved and healthy recipes. How to make perfect lassi?

Making lassi at home is quick and easy, but making perfect lassi might be little tricky. Yogurt and milk are the two main ingredients that I consider as deciding factors of a perfect lassi. The texture and creaminess of lassi depends on quality of yogurt we use. Ratio of milk and yogurt decides the rich and perfectly thick consistency of lassi. I managed to make the creamy and rich rose lassi after trying different ratio and different brands of yogurt. I suggest using greek yogurt or any thick natural yogurt and do not use any ice cubes after blending as it thins down the lassi. Instead chill lassi in refrigerator before serving.

Is rose lassi recipe adaptable?

Yes!! this recipe is totally adaptable to suit your preferred taste. You could add little honey or sugar to sweeten the lassi (I didn’t add any as rose syrup has enough sweetness). Generally lassi tastes best when served thick and creamy, but feel free to add more milk or chilled water to thin it down. You may swap crushed cardamom for cardamom seeds. You could add a dash of rose-water to enhance the fragrance.

How to make rose lassi

INGREDIENTS

1 cup = 250ml ; 1 tbsp = 15ml

Chilled natural yogurt: 2 cups

Chilled Milk: 1/3 cup

Rose syrup: 1/2 cup

Cardamom seeds: 1 tsp

Pistachios: 1 tsp, chopped

Almonds: 1 tsp, chopped

Edible dried rose petals: few

INSTRUCTIONS

Place yogurt, milk, rose syrup and cardamom in a blender.

Blend until lassi becomes smooth and frothy.

Pour lassi in glasses, garnish with dry fruits (pistachios, almonds) and rose petals.

Serve refreshing, fragrant and delicious rose lassi.

NOTES

Adjust milk while blending depending on your required consistency.

Add little more milk to get slightly thin consistency.

You could use store-bought rose syrup such as rooh-afza if you don’t have enough time to make rose syrup at home.

You might have to cut down rose syrup if using store-bought stuff. I would suggest to add half the quantity required and check the sweetness and fragrance of rose syrup after blending. Add more syrup if necessary.

Keep lassi in refrigerator if you wish to serve later.

You can store lassi upto 2 days in refrigerator.

As I have used homemade rose syrup(didn’t add any artificial food colouring) the lassi has turned light pink, lassi might turn bright and vibrant pink with store-bought rose syrup as it has artificial food colouring.
