Bread Vada is a simple and easy appetiser with most of the ingredients readily available in kitchen. This instant vada is crispy outside and soft inside infused with flavours of many vegetables, yogurt and few spices. This recipe does not require any water as yogurt act as binding agent which is sufficient to combine all the ingredients. It is an instant vada recipe, so make sure not to prepare dough in advance or allow it to sit for long time as the moisture from yogurt and onion alters the dough consistency and vada tend to break while frying in oil.
This is one of the clever ways to use up leftover or stale bread. Bread vada tastes good with tomato ketchup, mint sauce, mint and coriander chutney or sweet tamarind sauce.

Ingredients:
1 cup = 240ml
White Bread: 5 slices
Oil for deep frying
Yogurt: 1 cup
Carrot: 1/2 cup, shredded
Onion: 1/3 cup, finely chopped
Green Chillies: 2, chopped
Curry Leaves: 1 tsp, chopped
Coriander: 1 tbsp, chopped
Ginger: 1 tsp, grated
Mint: 1 tbsp, chopped
Rice Flour: 1/3 cup
Salt: as required
Cumin Seeds: 1 tsp
Chilli Powder: 1/4 tsp
Instructions:
Roughly crumble bread slices in a blender.
Transfer the bread crumbs to a wide bowl.
Now add carrot, onion, green chillies, coriander, curry leaves, ginger, mint, rice flour, salt, cumin seeds, chilli powder and yogurt.
Mix well so that all the ingredients are well combined and forms a soft dough.
Grease hands with oil and take a lime size ball from the dough.
Press gently and flatten the ball like medium thick patties.
Drop flattened patties in hot oil in a batch of 3-4 and deep fry.
Stir occasionally and turn once or twice for even browning, fry on medium heat till it turns golden and crisp.
Drain over paper towel.
Enjoy delicious crispy and hot Bread Vada with tomato ketchup or any chutney…..
Notes:
Do not add water as yogurt is enough to bind the ingredients.
Add shredded cabbage and spinach to make bread vada healthy.
Adjust chilli powder and green chillies as per your preferred spice levels.
You can break bread into small pieces with hands instead of crumble them blender.
Not just fresh bread even stale or leftover bread can be used.
Do not prepare the dough in advance or allow it to sit for long time as yogurt and onion releases moisture which makes vada to break while frying in oil. Always prepare the dough and fry vadas immediately.
