Instant Bread Vada Recipe (air fryer option)

Craving a quick snack on colder or rainy days? Try this instant bread vada recipe. A delicious deep-fried patty that goes perfectly well with a cup of coffee or tea. This delicious and indulgent vada made with white bread slices, a few spices and vegetables has a crispy outside and soft inside.

These deep fried Indian snacks are the perfect solution for a rainy day, a special occasion, or a crispy snack craving.

It is an instant vada recipe, so make sure not to prepare the dough in advance or allow it to sit for a long time as the moisture from yogurt and onion alters the dough’s consistency and vada tends to break while frying in oil.

This is one of the clever ways to use up leftover or stale bread. Serve bread vada with tomato ketchup, Yogurt Mint SauceGreen Chutney or Sweet Tamarind Sauce.

Bread: I used white bread. You may use wholemeal bread, millet bread or any type of soft bread.

Vegetables: Onion, green chillies, carrot and ginger.

Herbs: Curry leaves, coriander and mint are used to infuse more flavours.

Whole & Dry Spices: I’ve used the most common spices – cumin and chilli powder.

Liquids: Oil for deep frying and yogurt (curd) as a binding agent.

Flour: Rice flour is used to get a crispy texture.

How to make instant bread vada?

Roughly crumble 5 slices bread in a blender.

Place bread crumbs, green chillies, mint, finely chopped coriander leaves, chopped onion, grated carrot, ginger, rice flour, curd and cumin.

Combine well to form a soft dough.

Grease hands with oil, take a lime size ball and make medium-thick patties.

Fry vadas in oil, and flip in between for even browning.

Place fried vadas on a plate over a kitchen towel.

Enjoy delicious crispy and hot bread vada with tomato ketchup, tomato mint chutney, peanut coconut chutney or any other dip of your choice and a cup of masala chai.

Substitutions and Variations

Vegetables: Add shredded cabbage and spinach to make instant bread vada for extra nutrition.

Spices: A spoon of ajwain/carom seeds adds a lovely flavour and aids digestion.

Tips and Tricks

Water: Do not add water, as yogurt acts as a binding agent and is enough to combine and hold all the ingredients together.

Spicy: Adjust chilli powder and green chillies to your preferred spice levels.

Shred bread: Instead of using a blender, you can tear the bread into small pieces by hand.

Bread: Both fresh and leftover bread work well for this recipe.

Fresh dough: Avoid preparing dough in advance or letting it rest for too long. Yogurt and onion release moisture over time, which can cause vadas to break while frying. It’s best to mix the dough and fry vadas immediately.

How to make bread vadas in air fryer?

Follow the same steps to make a vada dough. 

Make the patties and arrange them in an air fryer basket with good spacing between them. 

Brush each patty with oil, place the basket in an air fryer and set the temperature to 180 C (375F) for 10 minutes.

After the air fryer beeps, take out the basket. Gently flip the patties with a spatula and brush them with oil. Put the basket back in the air fryer and cook for another 5 minutes.  

After the timer goes off, turn off the air fryer and remove the basket. 

Take the vadas out and enjoy with your favourite chutney.

Note: The time the air fryer takes to bake vadas depends on the thickness of the patties. So adjust it accordingly.

FAQ

Can I store leftover vadas in the fridge?

These instant vadas taste best when freshly made. However, if you store the leftovers in the fridge, you can still eat them within a day, although they won’t be as crispy and flavorful as they were when freshly made.

How to use up leftover bread vada?

Transform leftover bread vada into a delicious chat. Break them into bite-size pieces and arrange them on a plate. 
Top it with sweet tamarind chutney, green chutney, sweet yogurt and sev.
Finally, sprinkle chat masala and finely chopped coriander leaves.

1 Cup = 250ml ; 1 Tablespoon = 15ml ; 1 Teaspoon = 5ml

  • 5 slices white bread
  • ½ cup carrot shredded
  • cup onion finely chopped
  • 2 green chillies chopped
  • 1 teaspoon curry leaves chopped
  • 2 tablespoon coriander leaves chopped
  • 1 teaspoon ginger grated
  • 1 tablespoon mint chopped
  • cup rice flour
  • salt as required
  • 1 teaspoon cumin seeds
  • ¼ teaspoon chilli powder
  • 1 cup yogurt
  • oil for deep frying

Instructions

  • Roughly crumble 5 slices white bread in a blender.

  • Transfer the bread crumbs to a wide bowl.
  • Now add ½ cup carrot, ⅓ cup onion, 2 green chillies, 2 tablespoon coriander leaves, 1 teaspoon curry leaves, 1 teaspoon ginger, 1 tablespoon mint, ⅓ cup rice flour, salt, 1 teaspoon cumin seeds, ¼ teaspoon chilli powder and 1 cup yogurt
    1 cup yogurt, ½ cup carrot, ⅓ cup onion, 2 green chillies, 1 teaspoon curry leaves, 2 tablespoon coriander leaves, 1 teaspoon ginger, 1 tablespoon mint, ⅓ cup rice flour, 1 teaspoon cumin seeds, ¼ teaspoon chilli powder, salt
  • Mix well so that all the ingredients are well combined and forms a soft dough.
  • Grease hands with oil and take a lime size ball from the dough.
  • Press gently and flatten the ball like medium thick patties.
  • Drop flattened patties in hot oil in a batch of 3-4 and deep fry.

  • Stir occasionally and turn once or twice for even browning, fry on medium heat till it turns golden and crisp.
  • Drain over paper towel.

    I’ve not tried bread vada but does sound like a delicious crunchy crispy snack time treat. A quick and easy recipe to serve when one has the urge to have a fried snack.
