Green Banana Recipe (Aratikaya Puttu)

Looking for a simple and delicious green banana recipe? Try this typical south Indian dish aratikaya puttu. It is a perfect side dish to pair with rice and curry.

This is a plant-based dish made with green bananas (plantains), onion, garlic, and a few basic spices that you likely already have in your pantry.

Ingredients

  • Vegetables: Onion, garlic and green banana (plantain).
  • Spices: Turmeric powder, red chilli powder, salt, mustard and cumin seeds.
  • Herbs and Lentils: Fresh coriander leaves, urad dal and chana dal.
  • Oil: I have used olive oil but you could use any cooking oil that you use regularly in your kitchen.

Step by Step Instructions

Step 1: Peel the green bananas and chop each of them into 2 or 3 pieces.

Step 2: Place it in a pot of water and bring it to a boil over medium heat.

Step 3: Cook them until they are cooked but firm.

Step 4: Drain the water, mash it with a potato masher and set it aside.

Step 5: Heat oil in a pan over medium heat.

Step 6: Add mustard, urad dal and let them splutter.

Step 7: Now add chana dal, cumin and saute until the dal turns golden.

Step 8: Stir in curry leaves and saute for few seconds until fragrant.

Step 9: Now add garlic, onion and saute until onions are translucent.

Step 10: Reduce the heat, add turmeric, chilli powder, salt and mix well.

Step 11: Now add mashed green banana and gently mix making sure banana is well combined with the spiced onion mixture.

Step 12: Cook for 1-2 minutes until the flavours blend well and green banana is heated through.

Step 13: Switch the heat off and mix in coriander leaves.

Serve delicious aratikaya puttu with rice and pappu or rasam.

Substitutions and Variations

Chillies: Add a few chopped green chillies for a spicy kick. Saute them along with curry leaves.

Coconut: Freshly grated coconut or desiccated coconut adds a lovely nutty flavour to this green banana recipe. Stir it in along with coriander leaves.

Storage

Place the remaining aratikaya puttu in a clean, airtight container and store it in the fridge for 2-3 days.

To reheat, place the desired portion in a heatproof bowl and heat in the microwave until piping hot.

Tips and Tricks

Soak in Water: To prevent the chopped green banana from turning brown, immerse it in a bowl of water until you’re ready to cook it.

Use Oil: Coat the peeler/knife and your hands with oil to stop them from sticking.

Texture: Avoid mashing it into a paste; leave some chunks if you prefer your dish to have some texture.

Equipment

  • 1 Wide Steel Pan
  • 1 Steel pot
  • 1 Potato Masher
  • 1 Spoon

Ingredients

1 Cup = 250ml ; 1 Tablespoon = 15ml ; 1 Teaspoon = 5ml

  • 4 medium Green Banana/Raw Banana
  • 2 Teaspoons Oil
  • ½ Teaspoon Mustard
  • 1 Teaspoon Urad Dal
  • 1 Teaspoon Chana Dal
  • ½ Teaspoon Cumin
  • 1 sprig Curry Leaves remove leaves from stem and wash
  • 5 cloves Garlic peel and crush slightly
  • 1 medium Onion peel and chop
  • ½ Teaspoon Turmeric
  • 1.5 Teaspoon Chilli Powder adjust to suit your spice levels
  • Salt as required
  • 5-6 sprigs Coriander Leaves wash and chop

  • Now add garlic, onion and saute until onions are translucent.

  • Reduce the heat, add turmeric, chilli powder, salt and mix well.
    ½ Teaspoon Turmeric, 1.5 Teaspoon Chilli Powder, Salt
  • Now add mashed green banana and gently mix making sure banana is well combined with the spiced onion mixture.
