What is Raw Mango?
Raw mango is an unripe fruit with a green colour, firm texture and sour taste. They are harvested before ripening. The terms raw mango, green mango and unripe mango are just different terms used for the same thing. Raw mango is widely used in South Asian and Indian cuisine, green mango is prominently used in Southeast Asian cuisine and unripe mango is the term used in Western countries. Using these terms interchangeably often creates confusion for readers.
How to Pick Mangoes?
For raw mangoes, pick those with a vibrant green colour and feel firm and hard. Make sure there are no cuts, black spots or bruises and the skin is smooth and tight without wrinkles. If you want to use them for Indian dishes such as curries, rice and pickles, choose sour unripe green mango and avoid those with yellow patches as it indicates ripening. A slight green shade is ok, but avoid those showing any signs of yellowing.
For ripe mangoes, the colour can be misleading, as it varies depending on the variety. So, typical yellow, red or light green does not always mean the fruit is ripe. Instead, check its aroma, skin texture and firmness. Ripe mango should feel slightly soft when gently pressed, but avoid those that are mushy or too hard. Ripe mangoes usually have a sweet and fruity aroma near stem, the ones without any aroma may still be underripe. Choose the ones with smooth skin without any cuts or overly bruised. A few spots are fine as they are a sign of sweetness.
