No bake peanut butter oatmeal energy balls – a quick, simple, make-ahead snack perfect to make with kids. An ideal after-school treat or a healthy alternative to store-bought highly processed snacks.

These tasty little oatmeal energy balls are packed with fiber, nutrients, healthy fats and a bit of protein. A truly guilt-free treat for kids, with no refined sugar.

Nothing could be as easy as these no-bake energy balls to make with kids. It’s not only the best way to keep the young brains and little hands occupied, but also to minimise the screentime.

Ingredients

1 cup = 250ml ; 1tbsp = 15ml

Rolled oats: 1 cup

Peanut butter: 1/2 cup

Mini chocolate chips: 1/4 cup

Maple syrup: 2 tbsp

Vanilla extract: 1/2 tsp

Sea salt: a pinch

Instructions

In a large bowl, add all the ingredients mentioned above.

Now, using a wooden spoon, stir all the ingredients together until well combined.

Line the baking sheet with parchment paper. Take a small handful of the mixture, roll it into small 1 to 2-inch balls, and place them on the baking sheet.

Refrigerate the bites for 30 minutes or until solid. Healthy no bake peanut butter oatmeal energy balls are ready to enjoy.

Substitutions and Variations

Gluten-free: Use certified gluten-free oats.

Sweetener: You can substitute maple syrup with agave nectar or date syrup.

Nuts: Try almonds, pecans, walnuts, peanuts for a crunch.

Storage

These peanut butter energy balls stay fresh for up to 10 days if stored properly in an airtight container in the fridge. 

Freeze them for a longer shelf life. Place the tray with oatmeal peanut butter energy balls in the freezer for 2-3 hours or until they harden. Take the tray out of the freezer, transfer the balls into a freezer-friendly container or zip lock bags and store in the freezer.

Use these energy bites up within 3 months. Ensure to thaw them well in the fridge overnight before you plan to eat.

Tips and Tricks

Too Dry: If the oat mixture is too dry, add a few tablespoons of coconut oil or water and stir until well combined. Add 1-2 tablespoons at a time and add more if required while stirring the mixture. 

Too Wet: If the mixture is too wet to make the balls, add oats.

Peanut Butter: Make sure the peanut butter has a bit runny consistency. If it’s thick, place it in a heatproof bowl and microwave for a minute, stirring in between to loosen it a bit.
