Fennel Seeds (Saunf)

Fennel Seeds are the dried fruits of the fennel herb that has a warm and aromatic flavour used in both sweet and savoury dishes. These are oval-shaped, once dried it takes on a greenish-brown colour and slowly fades to grey as the seeds age. Due to their sweet and licorice like taste, these seeds are often confused with anise. This spice is used as a whole, crushed or ground in Indian cuisine. In India it is a common practice to serve raw or toasted fennel seeds after meals as mouth freshener and to aid digestion.

Kashaya, Chettinad masala recipe has these seeds as an essential ingredient.
