Instant pot is the most efficient way to make a cinnamon dolce syrup recipe with little effort. Unlike a stovetop, constant stirring is not required and there won’t be any spluttering all around. It is totally mess-free method with less cleaning!
All you need to do is place the ingredients and set the timer. Instant pot does the rest of the job. Once it is ready, filter it and store it in a glass jar or bottle.
Preparing this copycat Starbucks cinnamon dolce syrup at home is not only easy but economical and saves time. The best part is you can make your own cinnamon dolce latte in the comfort of your home and save time and energy making a trip to Starbucks and skip queuing the waiting line.
For coffee, the syrup need not have a sticky consistency. However, I prefer a slightly thick and sticky consistency to use in multiple ways. Just the cinnamon sticks could be used but I prefer ground cinnamon as it infuses intense flavour and aroma and is more cost-effective than a bunch of cinnamon sticks.

Add ¾ cup water, 1 cup brown sugar, ground and whole cinnamon sticks to the inner steel container of the instant pot.
Stir well and secure the pot with a lid.

Move the steam release valve to the SEALING position.
Press the pressure cook/ manual button. Set the timer to 10 minutes at high pressure.
Once the timer goes off, let it release pressure naturally (NPR). It will take around 13 minutes.

Once the pin next to the steam release valve drops, turn the steam release valve to the VENT position and take the lid off the pot.

Let the syrup cool down completely.
Remove the cinnamon sticks and strain the syrup.

Transfer the filtered syrup to the glass bottle and store it. Use it when required.
Substitutions and Variations
Brown sugar can be replaced with white sugar. The taste and flavour won’t be the same. Perhaps, this will impact the taste and colour as white sugar doesn’t have a molasses and caramelised taste. However, the syrup will be equally enjoyable.
You could replace half the quantity of brown sugar with maple syrup.
A dash of vanilla extract adds a lovely flavour.

Storage
Homemade cinnamon dolce syrup has a long shelf life as it doesn’t contain any perishable ingredients. Consider storing it in a glass jar or bottle.
It stays good for up to 4-5 weeks if stored properly in a clean airtight container at room temperature.
Fridge: It stays fresh for up to 6 months if stored in the fridge in a clean airtight glass bottle.
Freezer: Store it in an ice cube tray. Those flavoured ice cubes add a lovely flavour to iced tea such as iced green tea, iced london fog tea.
Tips and Tricks
Water and sugar proportions determine the thickness of the syrup. Less sugar than water yields thin consistency and a higher sugar quantity than water yields thick and sticky consistency.
Cinnamon sticks are used to impart pronounced flavour. Leave it out if you don’t like the extremely rich flavour.
Do not attempt to quick release the pressure. It will cause the hot syrup to splutter all around. Let the pressure release naturally and wait until the pin next to the steam release valve drops.
The time taken to release pressure naturally varies depending on the quantity inside the pot and the instant pot model. I use IP duo 7 in 1 and for the mentioned measurements it took around 16 minutes for the knob to drop after the pressure is completely released.
Usually, syrup thickens a little as it cools. However, if it doesn't turn out sticky and to your desired consistency, simmer it in saute mode for 5 minutes or until it thickens and reaches your desired consistency. Stir regularly to prevent the syrup from sticking to the base of the pot.
Set the pressure cook/manual mode for 0 minutes if you do not want a thick and sticky syrup.
I've strained syrup in a fine mesh steel strainer. However, the ground cinnamon won't be filtered out completely. The syrup still has traces of it and I absolutely have no issue with it.
If you want your syrup to be clear then use cinnamon sticks and leave out ground cinnamon. Once the syrup is ready take out the sticks.
How to make cinnamon dolce syrup on the stovetop?
Place the medium saucepan on the stove and combine water, brown sugar, ground cinnamon and cinnamon sticks.
Now turn the heat on, mix well and boil the mixture in the saucepan over medium heat.
Simmer for around 20 minutes or until the syrup thickens.
Switch the heat off and let the syrup cool completely. Strain and store the syrup in a glass bottle.

I really want to make the Connamon Dolce!
I cannot find where the amount of ground cinnamon is shown. I’m guessing 1-TB, but I am probably wrong. Could you please tell me the correct amount to use! It appears you use 1 1/2 cinnamon sticks.
Thank you so much for your recipes!
