Saffron is the most expensive spice in the world. It is an orange-red dried stigma obtained from the flower of Saffron crocus and has intense bittersweet honey flavour. Since ancient times it has been revered for its medicinal benefits, this spice is largely cultivated and harvested by hand. Just a pinch of saffron is enough to flavour the dish.
