Colourful, crunchy and appealing Mediterranean inspired Greek vegetable pasta salad is packed with fresh vegetables, tender pasta, crumbled feta and zesty dressing. Perfect for potlucks, parties or any gatherings.

This pasta salad is a great way to add variety of colourful vegetables to your diet while making it more appealing to picky eaters. Its quick and easy to prepare and comes together in just a few minutes and works perfectly for a busy weekday lunch or a light dinner.
It is also a crowd pleaser dish and an excellent choice to serve your guests at special occasions or parties.
Ingredients

- Pasta and Cheese: I have used a block of feta cheese instead of pre-crumbled and spirali pasta. Feel free to use any pasta shape of your choice.
- Vegetables: Red onion, cherry tomatoes, cucumber, corn and olives.
- For Dressing: Olive oil, garlic, oregano, lemon juice, salt and pepper.

Step By Step Instructions

Step 1: Boil pasta in salt water until al dente. Drain water and briefly run under tap water to cool pasta. Shake off excess water and set it aside.
Step 2: In a small jar, combine olive oil, lemon juice, garlic, oregano, pepper and salt. Secure the jar tightly with the lid and shake it vigorously.

Step 3: In a large bowl, combine cooked pasta, cucumber, boiled corn, cherry tomatoes, red onion and olives.

Step 4: Finally add crumbled feta and pour freshly prepared dressing.

Step 6: Toss gently until everything is well combined.

Enjoy delicious Greek pasta salad with vegetables straight away or refrigerate it until ready to serve.
Substitutions and Variations
Vegetables: You can swap fresh tomatoes for sun dried tomatoes and add different vegetables such as mixed bell peppers and steamed broccoli for flavour variation.
Protein: Try boiled chickpea or white beans for a dose of extra protein.
Spicy: Add a dash of red chilli flakes for a spicy kick.
Storage
Store leftover pasta salad in an airtight container in the fridge. It stays fresh for up to 3 days, but feta might soften slightly. Give it a good stir before serving, as pasta absorbs dressing over time.
If you are planning to make it ahead as part of meal planning or for a party, prep vegetables, dressing, cook pasta and store everything separately in an airtight container in the fridge. Toss everything when ready to serve.
Tips and Tricks
Cook Al Dente: Cook the pasta just until al dente. Overcooked pasta will make the pasta too soft and it might break apart when mixed with the other ingredients.
Cold Water: Run boiled pasta under cold running water in a colander to prevent it from cooking further and sticking to each other.
Pasta: Use pasta shapes such as spiralli/cavatappi, fusilli, rotini or penne that have nooks and crannies to hold onto the dressing and cheese.
Salt: Be mindful when preparing the dressing, as olives stored in brine already contain salt.

Equipment
- 2 spoons
Ingredients
1 Cup = 250ml ; 1 Tablespoon = 15ml ; 1 Teaspoon = 5ml
For Dressing
- 2 Tablespoons Olive Oil
- 2 Cloves Garlic peel and mince or chop finely
- 1 Teaspoon Oregano
- Pepper as required
- Salt as required
For Salad
- 500 gms Spiralli Pasta
- Red Onion peel, cut top and end off and dice into small cubes
- 12 (or) 200 gms Cherry Tomatoes wash and slice each into half.
- ¼ Cup (or) 270 gms Cucumber wash and dice into half inch cubes
- ¾ Cup (or) 45 gms Black Olives remove from brine
- ½ Cup (or) 65 gms Frozen Corn thaw
