Brighten up your breakfast or snack with orange granola. This vegan granola is packed with a burst of citrusy flavour, oats, spices and nuts, it's a refreshing twist on traditional granola.
Preheat oven to 160C (325F) and line a baking sheet with parchment paper or a silicone mat.
In a bowl, combine maple syrup, orange zest, orange juice and coconut oil.
2 big Oranges, 1 Tablespoon Coconut Oil, Maple Syrup, ½ Teaspoon Orange Zest
In a second bowl, combine the dry ingredients - oats, cinnamon, ginger powder, pumpkin seeds, almonds and flaxmeal.
2 Cups (or) 260 gms Rolled Oats/Old Fashioned Oats, ½ Teaspoon Ground Cinnamon (Cinnamon Powder), ½ Teaspoon Dried Ginger Powder, ¼ Cup Pumpkin Seeds, 15 Almonds, 2 Tablespoons Flaxmeal
Now pour the combined wet ingredients over the dry ingredients and mix until everything is well coated.
Spread the mixture evenly over the lined baking sheet.
Place it in the preheated oven and bake it for approximately 10-15 minutes.
Take the baking tray out of the oven and stir well.
Put the tray back in the oven and continue baking for another 10 minutes.
Once done, take the tray out of the oven and let the granola cool completely.
Now add raisins and mix everything well.
¼ Cup Raisins
Serve orange granola with milk, yogurt or enjoy a handful of it as a snack. Store the remaining granola in an airtight container.

Low Temperature: Bake granola at a lower temperature (around 325°F or 160°C) and for a longer time.
