Almond flour energy balls are a fantastic, nutrient-packed snack. These energy bites are vegan and gluten free, and made with only 6 basic ingredients. No blending, chopping, food processor, knife, or chopping board is needed. A mixing bowl, spatula, and 10 minutes are all that's needed.
In a mixing bowl, combine a cup almond flour, desiccated coconut and raisins. Mix well with a spoon or spatula.
1 Cup Almond Flour, ¼ Cup Desiccated Coconut, 2 Tablespoons Raisins
Now add almond butter, coconut oil and maple syrup. Stir until well combined. The mixture should be thick and easily moldable.
½ Cup Almond Butter, 1 Tablespoon Coconut Oil, 2 Tablespoons Maple Syrup
Take small portions of the mixture with a spoon and roll it between your palms to form small, bite-sized balls.
Place the formed balls on a baking sheet lined with parchment paper or silicone sheet and chill them in the refrigerator for at least 30 minutes to set.
Once they're firm, almond flour energy balls are ready to enjoy!
Store the remaining balls in an airtight container in the fridge for up to a week.
