Preheat oven to 140C (285F) and line a small baking dish with parchment/greaseproof paper.
Add 150 gms (or) 1 cup carrots, 125 gms (or) 1 cup oat flour, 1 teaspoon ground cinnamon and 255 gms (or) 1 cup medjool dates to a food processor.

Process until everything combines and comes together into a soft clumpy mixture.
Transfer it to a lined dish and spread evenly with a spatula.
Place a parchment/greaseproof paper on top of the mixture and press with fingers firmly to even out the surface.
Place the baking dish in the oven and bake for 25-30 minutes until it turns lightly golden.
Place the baking dish on a cooling rack and allow it to cool completely before cutting into bars.
Store them in a clean airtight container.

Baking time: Keep an eye on the oven as the cookies bake, since baking time depends on your oven's settings.Parchment paper: Placing parchment/greaseproof paper on top and gently pressing helps compact the mixture, even out the surface so that bars bake uniformly.
