Try these kid-friendly 3-ingredient orange almond cookies to keep little hands and brains busy and away from screens for a while. It contains no eggs, no oil, gluten free, and vegan. Perfect afterschool treat or to pack in a snack box.
Preheat oven to 160C (320F) and line a baking sheet with parchment paper/greaseproof paper.
In a mixing bowl, combine 245 gms (or) 2 cups almond flour, ¾ cup orange juice and ¼ cup maple syrup.

Mix well with a spatula until everything is well combined and comes together into a soft dough.
Scoop dough with a tablespoon and shape into a ball.
Place the dough ball on a lined baking sheet.
Repeat the process with rest of the dough.
Lightly flatten each ball with the back of spoon.
Add chopped 6-7 almonds in the middle of all cookies.

Place the baking sheet in pre heated oven and bake for 12-15 mins until outer layer starts to turn lightly golden brown.
Let cookies cool on the tray as they firm up while cooling.

Notes
Baking time: Keep an eye on the oven as the cookies bake, as the baking time depends on your oven's settings and the thickness of the cookies.Spacing: Place cookies on a lined baking sheet with a little spacing between them.
