Soft, naturally sweet and ridiculously easy to make, these 3 ingredient banana almond cookies are perfect for after school snack or to pack in a snackbox. These kid friendly cookies are gluten free, refined sugar free, flourless and vegan.
Preheat oven to 160C (320F) and line a baking sheet with parchment paper/baking paper.
Place 2 ½ large Bananas in a mixing bowl and mash with potato masher until mostly smooth.
Add 1.5 cups almond flour, 1 teaspoon crushed cardamom and stir with a spatula until everything is well combined and the mixture comes together into a soft dough.
Scoop dough with a teaspoon, roll into a ball and gently press to flatten slightly.
Place it on a lined baking tray. Repeat the process with remaining dough.
Slice ½ large Bananas into rounds and place each slice on top of each cookie.
Place the baking sheet in pre heated oven and bake for 12-15 mins until top layer start turning light brown.
Let cookies cool on the tray as they firm up while cooling.
Serve flourless banana cookies to your kid with a glass of milk or juice.

Baking time: Be sure to keep an eye on the oven while cookies bake, as the baking time depends on your oven's settings and the thickness of the cookies.Spacing: Place cookies on a lined baking sheet with a little spacing between them. Too much spacing is not required, as banana cookies don't spread much during baking.Oil: Lightly oil your hands before shaping the mixture into balls to keep it from sticking.Banana: Use ripe bananas for the best cookies.
