½Yellow Bell Pepper (Capsicum)wash and dice into cubes
½Red Bell Pepper (Capsicum)wash and dice into cubes
7-8Pitted Black Olives
70gmsFeta Cheesecut into 1.5 x 1.5 inch cubes
For Dressing
1.5TablespoonsExtra Virgin Olive Oil
juice from ½Lemon adjust to taste
1Garlicpeel and chop finely
¼TeaspoonOregano
¼TeaspoonDried Basil

Add olive oil, salt, garlic, pepper, oregano, and basil in a small jar.
1.5 Tablespoons Extra Virgin Olive Oil, 1 Garlic, ¼ Teaspoon Oregano, ¼ Teaspoon Dried Basil, Salt, Pepper, juice from ½ Lemon
Close the jar with an airtight lid and shake it well until all the ingredients are combined.
In a large bowl, combine cucumber, cherry tomatoes, onion, bell pepper, and olives.

Gently toss vegetables with a spoon.
Drizzle dressing on the salad and add feta cheese. Toss gently until everything is combined being careful not to break feta too much.
