Lemongrass Ginger Tea
Lemongrass ginger tea - a soothing and refreshing herbal tea made with fresh lemongrass, ginger and sweetened with honey. This refined sugar-free, caffeine-free and dairy-free tea makes a healthy and aromatic morning drink to kick start your day.

1 Cup = 250ml ; 1 Tablespoon =15ml ; 1 Teaspoon = 5ml
- 1 stalk Fresh lemongrass
- 2 Cups Water
- 1 inch Fresh ginger root peeled and roughly sliced into discs
- 1 Teaspoon Honey
Slice lemongrass stalks lengthwise and crush them slightly.

In a saucepan, bring water to rolling boil.
Add lemongrass stalks, ginger and boil for 10 minutes or more if you prefer stronger flavour.
2 Cups Water
Turn off the heat, discard lemongrass stalk and ginger.
1 inch Fresh ginger root
Pour the tea in a cup, mix in honey and enjoy hot and aromatic tea.

Lemongrass is slightly crushed to release more flavours.
There is no specific measurements of the ingredients for this recipe, just add more or less to suit your taste. First add couple of lemongrass stalks and a small piece of ginger, once it is boiled taste it, add more if necessary.
I've used store-bought lemongrass stalks, you can use lemongrass leaves if you get them in stores or if you grow in your garden.
