Fresh Fruit Salad
Fresh fruit salad with simple ginger lime dressing is an colourful and exotic salad that is great to have any time of the day from breakfast to dinner. The best part of this easy fruit salad is the simplicity of the dressing this is enhanced with ginger, lemon and cardamom. It adds just the right amount of lemon - gingery flavour to keep the salad fresh and refreshing.

1 Cup = 250ml ; 1 Tablespoon = 15ml ; 1 Teaspoon = 5ml
For fruit salad
- 1 Cup Apple (2 small size) chopped
- 1 Cup Pears (2 small) chopped
- 3 Plums pitted and chopped
- 5 Strawberries chopped
- 1 cup Pomegranate arils
- 1 Cup Pineapple chopped
- 1 Cup Clementines (2) peeled, segmented
For ginger lime dressing
- 1 Cup Water
- ½ Cup Sugar
- 1 inch Cinnamon
- 1 Teaspoon Ginger peeled, chopped
- 2 Cardamom pods
- 2 Tablespoon Lime Juice
For dressing place water, sugar in a saucepan and bring it to boil. Now add cinnamon, cardamom, ginger and simmer for 8-10 minutes or until syrupy and turn off the heat.
1 Cup Water, 1 inch Cinnamon, 1 Teaspoon Ginger, 2 Cardamom pods, ½ Cup Sugar
Mix in lime juice and leave the syrup to cool.
2 Tablespoon Lime Juice
Strain the mixture and keep it aside.
For the fruit salad, combine all the fruits in a large bowl, pour over the syrup and stir gently and serve in an individual bowls.

Any combination of fresh fruits will work for this salad.
The syrup can be made ahead and stored in refrigerator until ready to use.
Use dressing as per your required taste.
Left over lemon ginger infused dressing may be used in cocktails, lemonade, iced tea.
Lemon ginger infused syrup thickens after cooling. Longer you boil, thicker the syrup will be when cooled.
Substitute sugar with honey or maple syrup for healthy salad.
lemon not only infuses lovely flavour to the salad, but also stops fruits from browning.
