Vegetable Pulao, also known as pilaf or pilau, is a versatile and beloved dish in Indian cuisine!  It is made with with assorted vegetables, aromatic spices & fragrant herbs.

Gather Your Ingredients

Rinse rice in cold water 2-3 times, , then soak for 15 minutes. Gather chopped vegetables and ingredients. Turn on instant pot's sauté mode and add oil.

How to make vegetable pulao

Next, saute!

Stir in the vegetables, garam masala & cook for 3-4 minutes. Stir regularly to prevent the vegetables from sticking to the base of the pot.

While the vegetables are cooking, drain water from the soaked rice. Press CANCEL button. Add the soaked rice, coconut milk, water, coriander and gently stir. Check the taste and add more salt if necessary.

Secure the pot with the lid and turn the pressure valve to the SEALING position.
