Stuffed Paneer Tikka – cubes of paneer (cottage cheese) stuffed with pineapple mixture, marinated in spiced yogurt mix along with cubes of mixed peppers, onions and cherry tomatos, skewered and grilled till brown.
Traditionally known as tandoori paneer tikka, as cubes of paneer and vegetables are cooked in tandoor which lends smoky flavour. It is one of the most favourite and preferred appetiser in party. Here I have a cooked marinated paneer on grill pan.
Pineapple stuffed paneer tikka is a delightful dish bursting with many flavours that anyone can enjoy. Perfect blend of spices and pineapple filling offers a simple but taste packed dish. These are perfect for making ahead as the longer you marinate the cottage cheese and vegetables, the flavours will be more intense. This appetiser goes well with yogurt mint sauce, green chutney or sweet tamarind chutney. Try this recipe for your next get together party and relish this delicacy.
How to make Pineapple stuffed Paneer Tikka
Ingredients for Stuffing
1 cup = 250ml ; 1 tbsp = 15ml
Oil: 1/2 tbsp
Pineapple: 1/3 cup
Ginger garlic paste: 1/4 tsp
Chilli Powder: 1/4 tsp
Garam Masala: 1/4 tsp
Salt: a pinch
Instructions
Heat oil in a pan on medium heat.
Add ginger garlic paste and sauté for a minute or until raw aroma vanishes.
Now add finely chopped pineapple, chilli powder, garam masala, salt and sauté well.
Cook until pineapple softens, it takes around 2-3 minutes and turn off the heat.
Ingredients for marinade
Greek Yogurt: 1 cup
Tandoori Masala: 2 tsp
Chilli Powder: 2 tsp
Turmeric Powder: 1/4 tsp
Ginger Garlic paste: 1/2 tsp
Carom Seeds: 1/2 tsp
Kasoori Methi (Dry fenugreek leaves): 1 tsp
Coriander: 1 tbsp
Lemon Juice: 1/2 lime
Salt: as required
Instructions
For marinade, In a wide bowl add yogurt, turmeric powder, chilli powder, tandoori masala, salt, crushed kasuri methi (dry fenugreek leaves), carom seeds, ginger garlic paste.
Squeeze lemon juice and mix until all the spices blends well with yogurt and keep aside.
Ingredients required to marinate and grill
Paneer cubes: 8 (2inch x 2 inch)
Onion: 1/4 cup, cut into cubes
Mixed Peppers: 1/3 cup
Cherry Tomato: 4
Oil: To grease the grill
Chat Masala: a pinch
Instructions
Cut paneer into about 2 inch x 2 inch squares, cut onions and mixed peppers into cubes.
Slit the paneer horizontally almost 3/4 of the way down to accommodate stuffing.
Now place 1/2 teaspoon of pineapple mixture in the slit of each slice of paneer spreading evenly.
Add stuffed paneer, cubes of onions, mixed peppers and cherry tomatoes.
Mix gently to coat the paneer and vegetables, let it sit for at least 2 hours.
1st method:
Preheat grill, grease it with oil.
Grill marinated vegetables and stuffed paneer for 3-4 minutes or until cooked to your liking.
Now carefully flip them and cook other side for 3-4 minutes or until well done.
Turn off the heat and remove cooked paneer and vegatables from grill.
2nd method:
Brush skewers with oil and thread onion, pepper, paneer cubes alternatively on skewers and cook under hot grill for 10-12 minutes or until paneer turns light golden.
Sprinkle chaat masala and serve hot and scrumptious stuffed paneer tikka with yogurt and mint sauce or green chutney or sweet tamarind sauce.
Notes
If you do not have oven or grill, use non stick tava. Heat oil on tava and shallow fry skewered paneer and vegetables until well done.
Longer the marination, better the taste. Marinate paneer and vegetables for at least 2 hours so that the flavours gets infused in paneer and vegetables. If you plan to prepare tikka, wrap the bowl with cling film and refrigerate to marinate overnight.
Do not over cook paneer, as they tend to become dry, hard and rubbery. The paneer must be well cooked and soft.
You may use left over marinade to prepare paneer tikka masala.
You may add less salt in marinade as the pineapple stuffing has salt in it as well.
You may use vegetables of your choice like mushrooms, baby corn, broccoli, zucchini.
Replace greek yogurt with hung yogurt if you have enough time to prepare it.
Adjust spices as per your preference.

- 1 tsp Coriander
- Lemon Juice 1/2 lime
- Salt as required

So it’s a nice recipe but I would add a tablespoon of chickpeas flour to help the marinate coat and stay on the paneer cubes.Regards Hanifia
